Sweet & Sour Broccoli Pasta Salad
Instructions:Cook pasta according to package directions, omitting salt; add broccoli during the last 2 minutes of cooking. Drain; rinse under cold running water until pasta and broccoli are cool. Drain.
Place pasta, broccoli, carrots and apple in medium bowl.
Combine yogurt, apple juice, cider vinegar, oil, mustard, honey, and thyme in small bowl. Pour over pasta mixture; toss to coat.
Serve on individual dishes lined with lettuce. Garnish with apple slices, if desired.
