I had a huge bag of broccoli from Sam's and this was one of my experimental dishes. Very yummy and reminds me of a quiche.

Cooking Spray
Diced Onions
Small chucks of Broccoli
Diced Tomato
1 1/3 ounce Feta Cheese
1 cup egg beaters (1 person) OR 1 box of egg beaters for (2 person)
Salt & Pepper to Taste

The amount of onions and broccoli you use depends on you. Once they are cut up I throw in pan at medium heat until they begin to soften, then I add the tomato. Cook for minute, then add 1 cup egg beaters. Sprinkle with salt and pepper to taste and allow omlet to firm up. Once it appears to be firmer, but not fully cooked add your feta cheese by crumbling over and close omlet by flipping one half onto the other. Plan lid on pan and cook a few more minutes.

For a 1 person serving, I calculated 5 points (egg beaters = 2, feta = 3, veggies = free)
