    Default Carrot Brownies (no chocolate involved)

    Husband says these are NOT bars, they are brownie consistancy, so thus the name!

    Carrot brownies
    1 cup whole wheat flour
    1 cup oat bran
    1 tablespoon baking powder
    2 teaspoons cinnamon
    2 packages splenda
    1/3 cup brown sugar
    1/2 cuppureed pineapple (single serving kids lunch size pureed in blender with juice)
    1/2 cup egg beaters® 99% egg substitute
    1 teaspoon vanilla
    1/3 cup raisins
    2 cups shredded carrots
    Mix dry ingredients together in bowl. Add wet ingredients and mix to moisten. Spread batter in 8x8 pan. Bake 350 deg. about 25 mins. Can sprinkle lightly with rolled oats on top before baking, or mix 2 tbls applecider with 2 tbls powder sugar and spread on while warm. Cut into 12 bars. Very very filling! Nearest I can tell 1 point, maybe 1.5

    These look great! I'd probably need to eat them for dessert instead of breakfast.

    My first run through Master Cook! I get 1.48 points each based on the nutritional info provided. The unknown was the Splenda.

    This looks good, but my husband is allergic to pineapples-- among other things. (Very frustrating).


    Any ideas what I could use in place of the pineapples?

    I would think that a 1/2 cup applesauce would do the trick??
