    Default Crumbly Diet Soda Cake Question.

    This question has been asked a few times on the original post. Unfortunately, I think because the original post is soooooo big it's never really been answered. If it has been answered, sorry for the duplicate post. I'll need to go back, again and read the sticky thread. But recently, again, someone has asked:

    "is there anyway to prevent the cake from falling apart when you remove it from the pan".

    This happened to me and I just turned it into a Triffle. If anyone has any little "secret" please let all of us know. If your's never crumbles or breaks up please let us know what type of mix you use as that's the only thing I think would make the difference.

    Hi Linda,

    I had found this online, and it seemed to help mine:

    To keep cake from crumbling:

    - Use 10 ounces of soda instead of 12 ounces.

    - Or, use the reduced fat cake mixes from Betty Crocker and add all 12 ounces of soda.

    I had also heard of adding 2 egg whites to the mixture; maybe that would help?

    I am going to try this again!

    I also read that using a "pyrex" baking pan seems to help.

    I think making them into cupcakes in liners works the best.

    Thanks Christine and Carla for the suggestions. I think I'll try making the cup cakes. If I remember correctly I can get 12 cup cakes out of the mixture. Wish me luck!!!

    I made this and it turned out great with one egg white. I think that helps the texture. I still used 12 oz but had added the egg white.

    I've only made this into cupcakes. I let them cool and then squirted inside with FF cool chip (using a cake tip/bag) skinny version of a twinkie so to speak. My girls (young and old) love it. I freeze them (cake does not freeze solid) and they eat them strait from the freezer. I let mine sit 5 minutes for the cool whip to thaw out...it does freeze. So far I made cherry chip/cherry soda and white/w 7-up)

    I thought they were crumbly too..I'll try the egg white on the next one.

    I've also found that cooling the cake in the pan upside down helps to keep in one piece.

    I make this with one can diet soda and one egg.

    my fav variations....

    Diet Vanilla Cherry Dr.Pepper and Chocolate Cake mix

    or

    Diet cherry 7 up and vanilla cake mix.

    or

    Diet Orange and Vanilla cake mix
