Breakfast Burrito
(Serves 1 @ 6 WWp)
This microwave recipe is easy and fun -- and makes an equally good lunch or supper. The trick with microwaving eggs is to cook them on MEDIUM rather than HI. (If you’d rather use a skillet, use 1 tsp. olive oil or margarine to saute the vegetables. Remove veggies to cook the eggs, then mix veggies and eggs and make it 7 points rather than 6)

Don’t forget to serve with 0-Point salsa!

Breakfast Burrito
(Serves 1 @ 6 Pts. each)

1/4 cup diced bell pepper
1/4 cup diced onion
1 egg and 1 egg white
1 6” flour tortilla
1 slice turkey bacon, crumbled

In small microwave dish, cook pepper and onion in 2 Tbsp. water. Drain. Combine egg and egg white and cook In very small (1 cup) microwave dish covered with plastic wrap for 30 seconds on medium. Stir. Cook for another 13 seconds. Stir. Repeat until egg is to desired doneness. Combine with veggies. Put eggs and veggies on tortilla and top with crumbled turkey bacon.
