Orange French Toast
(Serves 4)

1/3 cup skim milk
2-3 Tbsp orange juice
1/3 cup egg substitute or egg whites
1 tsp. vanilla extract (I usually use 2)
Dash cinnamon and nutmeg
4 slices reduced cal bread
1/2 cup vanilla yogurt
1 large orange, cut in 8 slices

Combine milk and orange juice to make 1/2 cup liquid. In a shallow dish, blend milk/orange mixture, eggs, vanilla and spices. Dip bread slices and cook on non-stick griddle sprayed with Pam, about 3 minutes for each side. Cut in half and top each with 1 Tbsp. yogurt and 2 orange slices.
