    I am looking for a 1 point cookie recipe and all I know if that it has rice crispy ceral in it.

    Is it a real cookie or more like the Rice Krispie Treats you buy?

    Found this recipe:

    Butterscotch (or Chocolate) Rice Krispie Cookies ... 1 point

    Serving Size : 60

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1/2 tsp cream of tartar
    1 cup unsweetened applesauce
    1 cup Egg Beaters® 99% egg substitute
    1 box yellow cake mix
    2 cup quick cooking oats
    2 cup rice krispies
    1/2 cup chocolate chips -- or butterscotch


    Preheat oven to 375.

    Spray sheets with non-stick cooking spray, set aside.

    Mix first 4 ingredients together until well blended.

    Stir in oatmeal and rice crispies.

    Drop by rounded teaspoonfuls onto prepared sheets.

    Top each cookie with 3 chips.

    Bake 10 minutes or until bottoms are golden brown.

    Description:
    "Makes 60 cookies, 1 point each (or 120 mini-cookies at 2 for 1 point"

    it is like a real cookie and you are real close. I am going to try these. My friend has the recipe and can not remember to bring it to me. Her's are made with flour but about the same other item.

    I made these tonight, but instead of making them as drop cookies, I mixed in the butterscotch chips and spread the batter in a 11" X 7" baking dish, cutting them into 64 squares (8 rows by 8 rows). Quite delicious! Thank you for the recipe, Frisky!

    I made these delicious things again last night, this time using a betty crocker devil's food mix and peanut butter chips- YUM!!! I tossed the chips into the batter and wound up getting 91 cookies (I could have eeked out one or two more, but the kids wanted to lick the bowl ) @ .8 per cookie. I think next time I might pour the batter into a 11 x 15 jelly roll pan and slice them into bars since cookies can vary in size.

    This is such a terrific recipe, one of the best ones in my opinion! Better than the frozen peanut butter/ chocolate cookies! Thnak you so much, Frisky, for posting it!!!

    I finally got the recipe form my friend and they are great. Here is another one point cookie. Hope you enjoy it!


    OATMEAL KRISPIES
    1/3 cup margarine softened

    ½ cup firmly packed brown sugar

    1/3 cup frozen egg substitute thawed

    ½ t. vanilla extract

    ¾ cup all purpose flour

    ½ t. baking soda

    ¼ t. salt

    1 ½ cup quick oats uncooked

    ½ cup semisweet chocolate chips

    ½ cup crisp rice cereal

    vegetable cooking spray



    Beat margarine at med. Speed until creamy, gradually add brown sugar, beat well. Add vanilla and egg substitute, beat well.



    Combine flour, baking soda, and salt: add to the margarine mixture and mix well. Stir in uncooked oats, cho. Chips and cereal.



    Drop by tablespoonfuls ( 2” apart) on sprayed cookie sheet. Bake @ 350* for 8-10 min.



    40 cookies…..1 point each…….57-calories……2.5g-fat…………..0.4g-fiber
