    Oh my goodness, this is so yummy and full of flavor. I like to serve it when we have company from out of town and need to throw something together that looks like I worked really hard. It has to be something that I can actually eat too. The simplicity is that you can make it the night before and pop it in the oven anytime the next day. We love it for brunch.




    Make Ahead Breakfast Casserole

    3/4 pound ground pork
    3/4 teaspoon Italian seasoning
    1/4 teaspoon fennel seeds -- crushed
    2 cloves garlic -- minced
    1 cup milk, skim
    1/4 cup cheddar cheese, lowfat -- shredded
    3/4 teaspoon dry mustard
    1/2 teaspoon salt
    1/2 teaspoon ground red pepper
    3 green onions -- chopped
    16 ounces egg beaters® 99% egg substitute
    6 ounces white bread slices -- cut in 1/2" cubes

    Cook ground pork, Italian seasoning, fennel, and garlic in a large nonstick skillet over medium heat until pork is browned, stirring to crumble. Drain; set aside.

    Combine milk and next 6 ingredients in large bowl; stir with a whisk until well blended. Add pork mixture and bread cubes, stirring until well blended. Pour int an 11 x 7 baking dish coated with cooking spray. Cover and chill 8 to 12 hours.

    Preheat oven to 350.

    Bake, uncovered, for 50 minutes or until set and lightly browned.

    This is an awesome recipe! I haven't made it since Christmastime, but will have to put it on the menu soon- yum...
