    Crockpot Hamburger Casserole

    1 1/2 pounds ground chuck -- lean
    1 1/2 cups peas, frozen
    2 ounces celery -- (2 ribs)
    10 ounces tomato soup, reduced fat, condensed
    1 teaspoon garlic powder
    1/2 teaspoon salt
    2 medium potatoes -- sliced
    3 ounces carrots -- diced
    10 ounces water
    1/2 teaspoon pepper

    Brown ground chuck & drain. Peel and slice potatoes, carrots, celery and onions. Place layers of vegetables in order given into crockpot. Combine garlic powder, salt, and pepper. Sprinkle seasonings over each layer. Put browned ground beef vegetables. Combine soup and water & pour over all. Cover and set on low 6 to 8 hours or high 2 to 4 hours, stirring occasionally. Serves 8 to 10.

    Autumn Vegetables

    1 1/2 pounds Roma tomatoes
    1 1/2 pounds new potatoes
    1 pound red onion -- cut in wedges
    1 pound zucchini -- sliced 1" thick
    2 ounces celery -- 2 ribs, sliced
    2 cloves garlic -- minced
    1/3 cup parsley -- chopped
    1 teaspoon mint -- chopped
    2 tablespoons olive oil
    1/2 teaspoon salt
    pepper to taste

    Divide tomatoes and place half on the bottom of the crock pot. Layer remaining ingredients in order given. Add remaining tomatoes. Cover, and cook on LOW for 8 to 10 hours. During cooking, if you are around, stir the vegetables carefully to redistribute them. Serve hot or room temp. Excellent with crusty French bread.

    Crockpot Aztec Black Beans

    1 pound dried black beans
    16 ounces salsa
    3 cloves garlic

    1. Rinse black beans, removing any stones or foreign objects.
    2. Cover with water, soak all night.
    3. Drain beans and place in crockpot with salsa.
    4. Add enough water to just cover beans.
    5. Cover and cook on low 8-10 hours.

    NOTES : Having lived for years in my husband's home state of Texas, there is no other salsa or picante sauce than PACE!

    I usually decide to cook them the morning I want them so I just put them in the crockpot, cover them with at least 1" of water and cook them all day. They turn out just as good as soaking overnight.

    Warm Chunky "Apple Pie"

    10 large apples -- *see Note
    1 cup Splenda -- **see Note
    1/2 cup water
    1 tablespoon cinnamon -- ***see Note

    1. Peel and cut apples into chunks and place in a crockpot.
    2. In a small mixing bowl mix splenda, water and cinnamon.
    3. Pour over apples.
    4. Cook on Low setting for 4-5 hours stirring occasionally.
    5. Serve warm with Cool Whip (I used Fat Free Cool Whip for 0 pts).
    6. 1 Cup= 1pt.
    7. Delicious and very filling too!

    NOTES : *I always use Granny Smith apples for this.

    **If you want a richer flavor, use 3/4 cup Splenda and 1/4 cup Brown Sugar Twin.

    ***I use fresh ground cinnamon which is stronger than what you buy in the store. If you need to, add more cinnamon to taste.

    Glazed Chicken in a Crockpot

    6 ounces orange juice, frozen concentrate
    1 1/2 pounds chicken breast, no skin, no bone, R-T-C
    1 teaspoon marjoram
    1/4 teaspoon ground nutmeg
    1 teaspoon garlic powder
    1/4 cup water
    2 tablespoons cornstarch

    Combine thawed orange juice concentrate (not regular orange juice) in bowl along with the marjoram, garlic powder and nutmeg. Split the chicken breasts to make 6 serving sizes. Dip each piece into the orange juice to coat completely. Place in crockpot. Pour the remaining orange juice mixture over the chicken.

    Cover and cook on low for 7-9 hours, or cook on high for 4 hours if you wish. Precise cooking time is not important in crockpot cooking.

    When chicken is done, remove to serving platter. Pour the sauce that remains in crockpot into a saucepan. Mix the cornstarch and water and stir into the juice in pan. Cook over medium heat, stirring constantly, until thick and bubbly. Serve the sauce over the chicken.

    Cabbage Roll Casserole

    6 cups shredded cabbage
    1 cup shredded carrots
    1/2 pound ground beef, extra lean
    1/2 teaspoon salt
    1/2 teaspoon pepper
    1 medium onion -- chopped
    3/4 cup long-grain rice
    26 ounces spaghetti sauce
    1/2 cup water
    1/2 teaspoon dried basil

    Place half the cabbage and carrots in crockpot. Crumble ground beef over top. Sprinkle 1/4 tsp of the salt and 1/8 tsp of pepper over beef. Evenly spread onion, the rice over top. Top with remaining cabbage, salt, and pepper. Combine spaghetti sauce , water, basil and seasoned salt. Pour over cabbage. Cover and cook on Low 5-6 hours or until rice is tender.

    NOTES : I cook and drain the ground beef before I put it in the crockpot. It isn't necessary if you use extra lean beef but I have issues with fat.

    As is the recipe is 7 points per serving but the servings are HUGE! If you changed it to 8 servings it would be only 5 points. Depends on how hungry you are!

    Peaches, I'm guessing no. You don't when you roll them up the old fashioned way.
