    Default Banana Baked Oatmeal - Yummmy!!

    Shalom Y'all!

    I decided to whip up a pan of this for my college-boy who is
    going back to college today and needs a healthy breakfast.
    It is delicious, everyone (including college-boy) liked it!

    BANANA BAKED OATMEAL

    Recipe By: Vickilynn Haycraft (c) 2004
    Makes 8 servings


    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    2 1/2 cups rolled oats
    1 1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1 Tablespoon cinnamon
    1/2 cup raisins
    1 cup homemade soymilk, unsweetened -- or any milk
    2 large eggs (or 4 egg whites for lower fat)
    1/2 cup unsweetened applesauce
    1/3 cup honey
    2 medium bananas -- mashed
    1 teaspoon vanilla

    Preheat oven to 350 degrees. I use a 12-inch cast iron skillet and preheat it in
    the oven. You can also use a stoneware deep dish baker.

    In a medium bowl, mix the dry ingredients.
    In another bowl, mix the wet ingredients making sure they are fully mixed.
    Combine the wet and dry ingredients together, mixing well, and pour batter into pan.

    Bake for 40-45 minutes, or until golden brown. Test center by inserting a knife and if it comes out clean, the Baked Oatmeal is done.

    Serve with butter, applesauce, vanilla yogurt, milk or just by itself!

    I LOVE THIS RECIPE THE BEST! Thank you!! I eat a piece of this everyday and my daughter likes it too (as a granola bar replacement).

    I ran out of raisins so I used cranberries instead.

    Also, I dont have a cast iron skillet and I wanted the pieces to fit in the toaster so I made it in a 9 x 13 glass pan for 45 minutes.

    WONDERFUL!!!

    I am going to use splenda and no raisins as I am on core, but this sounds so fabulous. Always looking for good breakfast food that is FAST and easy. Thanks for sharing this recipe!

    MOMMA~ I made this yesterday morning and not only did the house smell WONDERFUL~ it tastes GREAT!! I made it just the way you posted it less the soy milk , I used skim because that is what I had, everyon in my home loves it~ I have to keep the little guys pieces away from the edge of the counter too, as our black lab loves it too. LOL Thank you!

    Just got this out of the oven and it is sooooooo good! Yummy....am I correct, though that it is 4 pts per serving? It is worth it, of course! Just checking

    Just bumping this up. As a Corebie Newbie, I just made this today and it is wonderful. Have to count points for the honey and raisins but it is well worth it. Also on the 5 core recipes I can't live without, but I just wanted to highlight it for anyone who is in my shoes.
