    Hi All,
    Thought I would share this recipe with you. It is one of our favorite desserts. I got it off the internet, but cannot find the link anymore. If you try it, let me know how you like it. Enjoy!

    Banana Brickle Bars

    1/2 cup sugar
    1/2 cup firmly packed brown sugar
    3/4 cup mashed bananas, 2 medium
    1 egg
    1 cup quick-cooking oats
    1 cup all purpose flour
    3/4 teaspoon baking soda
    1/2 cup white vanilla chips
    1/4 cup chocolate-covered toffee bits
    or 1.4 oz toffee bar

    1. Heat oven to 350 F.
    2. Spray a 13 x 9 inch pan with nonstick cooking
    spray.
    3. In a large bowl, combine sugar, brown sugar,
    and bananas; beat until well blended. Add egg
    and oats; beat well.
    4. Lightly spoon flour into measuring cup; level
    off. Stir in flour and baking soda until well
    blended. Spread into sprayed pan.
    5. Bake for 16 - 20 minutes or until bars spring
    back when touched lightly in center.
    6. Remove from oven; place on wire rack. Immediately sprinkle with vanilla chips. Let stand 1 - 2 minutes to melt. Spread over bars. Sprinkle with toffee bits. Cool at least 30 minutes. Cut into 24 bars.

    These look AWESOME!!! I have a lot of frozen bananas, so this will be on the list after the holidays!! I 'll have to go get a Skor bar, though.. I don't know if I dare.. :eek:

    I made these a few days ago and they are sooooo awesome! Thanks so much for sharing this recipe. They only lasted a couple of days at my house.

    I made these today, but a bit differently (when I ran it through MC, the points came out at 2.3 per bar :eek: ):

    Banana Brickle Bars

    1/4 cup sugar
    3 tbs splenda

    1/2 cup firmly packed brown sugar
    3/4 cup mashed bananas, 2 medium
    2 egg whites
    1 cup quick-cooking oats
    1 cup all purpose flour
    3/4 teaspoon baking soda
    1/2 cup peanut butter chips (my white chocolate chips would not melt)
    1/4 cup skor toffee baking bits



    1. Heat oven to 350 F.
    2. Spray a 13 x 9 inch pan with nonstick cooking
    spray.
    3. In a large bowl, combine sugar, brown sugar,
    and bananas; beat until well blended. Add egg
    and oats; beat well. Mix in toffee bits.
    4. Lightly spoon flour into measuring cup; level
    off. Stir in flour and baking soda until well
    blended. Spread into sprayed pan.
    5. Bake for 16 - 20 minutes or until bars spring
    back when touched lightly in center.

    They came out fantastic!! OH YUM!!! With the changes they are exactly 2 points per bar.

    I made these again on the weekend to take to the beach. This time I made them in mini muffin tins and melted the peanut butter chips and spread it on the bites. YUM!!! My family seems to prefer the peanut butter chips over the white chocolate, but they like peanut butter and banana sandwiches too. :rolleyes:

    Made these again last week, but I accidentally used rolled oats instead of quick oats. Came out fine, if a bit more chewy. YUM!!! This is one of the BEST recipes I've had!!

    I tried to find the website that I got this Banana Brickle Recipe from:

    but it is no longer in use. There were a few good recipes there, and I wish I could find where it has moved. My DH thinks I am absolutely nuts for printing all the recipes that I print. I can't get to make all these recipes right away, and if I don't print them up, when I go back for them, they might be gone! Thank goodness I printed this out.

    I'm going to poke around a bit more...

    okay, I've poked around the remnants of the site, and managed to get a few of the recipe pages to work (Banana Brickle Bars still comes up when clicked), but most of them are lost, which is a pity. A google search will probably yield a bunch (I found some), but one that escapes me is the Banana-Berry Nut Bread. MT, if you have this one and it's no trouble (well, not too much ), can you post it? As I have the time I'm going to search around the web for these recipes, collect them and stick them in a post at Mess Hall. If there are several versions I'll post the different ones I find.
