    Smile Great CORE-N Bread

    I found this on the WW boards...Let me know if you try it, or like it~ :bcbsalute

    Great Core-n Bread

    1 cup cornmeal
    1/2 cup Cream of Wheat, uncooked
    1 cup ff sour cream
    1/2 cup unsweetened applesauce
    1 tsp baking powder
    1/2 tsp salt
    1/3 cup splenda
    2 tsp olive oil
    2 eggs
    1/2 cup ff milk.

    The cornbread bakes at 400 for 35 minutes.
    (WWCarol: I'm assuming it goes in a "sprayed" 8 X 8" pan.)

    P.S. I have never found a Core cornbread recipe that I have liked (yet)! I'd rather eat polenta any-old-day! :bcbsalute [Edit: NOW I have! This is great stuff!]

    Carol,

    I had to try a piece of this when it cooled. It is very YUMMY! It came out very moist, and very much the texture and consistency of "real" cornbread. It will definitely be a regular on our menu when we have chili or a southern-style soup. Thanks for sharing! Give it a try!

    Okay. Now that Christine and Wendy were the Guinea Pigs...! (Thanks for reporting back...) I will now try this recipe.

    To this point I have not found a Core cornbread that I have liked...

    Carol, tried the Core -N Bread yesterday and I really like it. My DH thinks it is a winner also. It's pretty good cold as well. Thanks for posting it.

    Ok I'm sold. I have not liked any Core cornbread yet, but am making homemade soup from the leftover turkey for Tuesday's dinner, and this would make a nice accompaniment.

    I made it!

    Didn't have FF sour cream, so I substituted FF plain yogurt. Hot out of the oven (burn-your-mouth :eek: ) it had a "slightly" tangy taste to me (DH loved it)...

    But next morning, cold, it tasted great...and...

    Slit it open and microwaved it. Added a 1/2 cooked hot chicken sausage (1 WAP) and mustard. BOY was that good! :bcbsalute

    It will be great alongside chili, etc.

    First Core cornbread that I've liked~ Now I need to try it with the FF sour cream, following the recipe as written~

    This just came out of the oven. Pretty tasty! I think next time I will either reduce or eliminate the splenda though. I think it will be better without it.

    oh yeah! this was pretty darn fine. Made it with the ff sour cream and it was tangy. Tonight with a mix of ff sour cream and yogurt with vegetarian chili.

    I will probably start counting this with WPA's as it is pretty easy to overeat. Today I had a piece at each meal. Why? Because it is very bread like. Ding a ling! Red Light!

    I made this recipe last night to go with the Turkey Chili recipe. Didn't care for the chili but loved the cornbread. It turned out great....the second try. The first batch had been in the oven for about 10 minutes when it suddenly hit me that I'd left out the ff sour cream. I tried removing the batter from the pan but it was already set around the edges and on the bottom, so I scraped it all out into the garbage disposal (my Mom turned over in her grave, I'm sure, to witness the waste) and started back at square 1. Second batch turned out super. Today I had a couple of squares with turkey veggie soup. I just warmed them up in the microwave, sliced and topped with a slice of ff proc cheese and a slice of lean sauteed ham. Yummy! It sure is filling. Should have just had one square.

    It didn't say, Laurie. But it's an 8"X8" square pan. For some Cornbread eaters, that might be 4 servings. For some it might be 8. But I cut it into 6 servings~ :bcbsalute

    I made this last night, along with Chili, for supper. I mixed this up first and then mixed up a traditional boxed cornbread mix for the family (in case this didn't turn out well.) The batter for the Core-n bread was dense and substantial, the boxed mix seemed like marshmallow fluff in comparison.

    The results - the core-n bread was WONDERFUL. It was moist, dense and delicious. Next time, there will not be two different cornbreads on the table.

    I've been cooking this is a 13x9 pan for about 20 minutes. Makes a thinner, slightly crispier bottomed cornbread. Definitely a favorite though!

    This is BY FAR the best core recipe I've found on this board. It's amazing and difficult for me to overeat as it's so dense. Delicious!
