    Default Universal recipe for crustless quiche

    Want to make crustless quiche for a satisfying, quick meal? Here's what I've learned about how to make any type of quiche you'd ever want ---

    4-6 eggs or whole egg and egg white combo
    1 cup milk (1%, fat-free, evaporated or buttermilk)
    1-2 cups veggies (leftovers, small-cut fresh or thawed from frozen)
    2-4 oz meat (leftover are good, but this can be optional!)
    2-4 oz cheese (strong cheeses like Parm or Pecorino-Romano are good at 2 oz but more mild cheeses usually require the full 4 oz)
    Spices to taste: salt, pepper, paprika, nutmeg (pick and choose!)

    Preheat oven to 300 degrees.

    I like to use a 7 x 11 glass plan for my 6 slice quiches and a 9 in round glass pie pan for my 8 slices. Always mist with oil of choice.

    Layer the veggies down first, then the meat if using and then the cheese.

    Whisk the eggs, milk and spices together. Pour over the veggies, meat and cheese.

    Carefully place in the oven and set timer for 70 minutes. Check after 70 minutes. Depending on ingredients, it may need another 5-10 minutes.

    Allow to cool and slice in to servings. Serve, or cover and refridgerate. If you like warm quiche leftovers, microwave for 2 minutes at 50% power.

    Possible combinations ----

    eggs, milk, spinach & feta
    eggs, milk, green apple, bacon & blue cheese
    eggs, milk, mushrooms, bacon & cheddar
    eggs, milk, green pepper, onions, ham & cheddar
    eggs, buttermilk, zucchini, & Parmesan
    eggs, buttermilk, yellow squash & Provolone
    eggs, milk, fresh tomatoes & feta
    eggs, milk, tomatoes, leftover taco meat & cheddar
    eggs, buttermilk, broccoli, tomatoes & feta
    eggs, milk, spinach, tomatoes, bacon/ham & cheddar

    Mary --- points vary due to ingredients and size of quiche but most of them come out to be 3-4 points per slice.

    I think you read my mind too. I came on just to look for a quiche recipe and there it was!
    This is the way I like to cook too. Start with a universal base and vary from there.

    Update:
    I made this with
    3 Morning Star Meatless Sausage Patties Crumbled
    1/2 large onion
    Garlic
    Veggie Yougurt based cheese (a semi-hard cheese)
    Rosemary, Salt, Pepper, and Cyanne Pepper

    It fed myself, husband and friend who had been working outside most of the day

    I make a similar quiche but I saute a 10 or 12 oz package of fresh mushrooms, sliced to 1/4 inch thick with a little Pam. I use them to line the pie pan and make a sort of crust. I sometimes add a little chopped onion and turkey bacon to this to add flavor.
