    Default CORE: Crustless Spinach Quiche

    CRUSTLESS SPINACH QUICHE

    10 oz. pkg. frozen chopped spinach
    Pam spray
    4 whole eggs
    8 egg whites
    1 1/2 c. skim milk
    2 tbsp. arrowroot (or cornstarch for non-Core)6 oz. ff cheddar cheese, shredded
    1/4 tsp. Mrs. Dash salt free table spice
    1/4 tsp. pepper

    Preheat oven to 350 degrees. Spray 10 inch pie plate with Pam spray. Shred cheese and set aside. Microwave spinach (with no added water) until thawed and separated. Press spinach with fork in colander to remove excess moisture. In food processor or large blender, blend 4 whole eggs and whites until foamy. Add milk, cornstarch and spices. Pulse blend to mix. Add drained spinach. Pulse blend to mix. Pour mixture into 10 inch pie plate. Swirl shredded cheese through mixture with a fork. Bake for 45 minutes or until golden brown. Serves 4 - 6

    This sounds great ... but now I may sound dumb here but what is arrowroot and where do you get it??

    OK, I am new at this. I tried to figure it out on my own, hopefully it's right. Is it three points if it is a 6 serving pie?

    10 oz spinach 0
    Spray 0
    4 eggs 8
    8 egg whites 3
    1 1/2 c. milk 3
    2 tbs cornstarch 2
    6 oz ff cheese 3
    1/4 tsp mrs.dash 0
    1/4 tsp pepper 0


    Divided by 6 = 3.16 ?????


    Let me know if this is right?

    Donna,

    Arrowroot is a starch, like cornstarch. You can get it at most health food stores. You can sub cornstarch for the arrowroot on Flex or count it on Core.
