I've not tried these yet, but a friend swears they're delish! I thought I'd pass them along.

Mock French Toast, or Mock Crepes

1 cup fat-free ricotta
1 egg + 2 egg whites (or use 2 eggs)
2 packets Splenda
2 tsp vanilla extract
cinnamon (to taste)

Blend everything in blender. Spray frying pan with cooking spray. Cook each crepe over medium to low heat (it takes awhile to cook--don't touch them until they look sort of dry on top). They are very delicate and are sometimes difficult to flip. The trick is not to be too hesitant -- they bend a bit when you're trying to slip the spatula underneath, but just keep pushing and then flip quickly!


Mock Cinnabon

1/2 cup fat-free cottage cheese
1 packet Splenda
tsp cinnamon
Pecans to taste (option and count WPA)

Blend with fork and microwave for 15 seconds to take the chill off if desired.
