    Default Breakfast Sausage Cupcakes

    This recipe has been a favorite of mine & my family's for quite some time...but I modified it to be WW friendly. I ran it through the Recipe Builder in e-tools to get an accurate points count. Hope you like it...

    Sausage Cupcakes
    POINTS value | 4
    Servings | 6 @ 2 cupcakes per serving

    These keep well in the refrigerator for a week. Note: They get spongy if you freeze them.

    You can substitute different cheeses and/or ground turkey or bacon instead of sausage but the points per serving will also vary. You can also substitute different veggies.

    8 oz low-fat sausage
    1/3 cup diced yellow or red onion
    1/4 tsp minced garlic
    1/2 tsp table salt
    8 large egg(s)
    4 oz low-fat cheddar or colby cheese
    1/3 cup 2% reduced fat milk


    Saute breakfast sausage with diced onion, minced garlic & salt.

    While that's cooking, beat eggs & milk, then add shredded cheddar cheese to mixture.

    When the sausage mixture is browned, drain any remaining grease and/or drain on paper towels. Then add sausage mixture into the liquid mixture and stir to thoroughly mix.

    Spray 12 muffin tins with Pam & spoon about an even amount of the mixture into each cupcake hole.

    Bake at 350 for 20-25 minutes.

    Remove to a wire rack to cool. When thoroughly cooled, store by 2's in ziplock baggies.

    Yummy! I make something like this as well called a quiche cup (great for on the run breakfasts) and use Morningstar Farms breakfast patties that have been thawed and crumbled.

    This looks awesome, V! I am gonna try it when school starts.

    This is a nice reminder of these types of breakfast treats. And this could easily be converted to a Core recipe although I can't find any sausage type items, even Morningstar, that are Core foods. Will have to use 95%+ ground beef or Core veggie burgers shredded up or even cut up Canadian Bacon (I'm still taking it as being Core). I can now use regular eggs vs. egg beaters since I'll be subbing the cheese & milk to FF.

    Hey Judy! It looks like the Morningstar Farms sausage crumbles are CORE and could be used. I find them slightly bland but if you doctored them up with a bit of dried sage and garlic powder, they'd kick. I might use these the next time I make quiche cups because it's easier than crumbling a bunch of sausage patties up.

    Ohhhhhhhh Judy the canadian bacon sounds like a yummy idea too...I'll have to try that alternative!

    I made a half batch of these today using Egg beaters and a sweet apple maple chicken breakfast sausage. I left out the onion, garlic and salt.

    I really liked them. DH thinks he would like them with different sausage. He doesn't like the sweet maple sausage. I'll be making these again soon! Thanks!

    Any idea how much it alters the points if you use egg beaters and morningstar farms veggie sausage??

    Love this idea. I think I am going to make these with the Hormel Turkey Pepperoni which is low-fat, very ungreasy, too. Grandkids might just like this!

    I am making a batch of blueberry oatmeal muffins for this weeks breakfast, but this will be on my agenda to make a batch come mid week!

    I will make the following substitutions
    8 oz low-fat smoked sausage
    1/2 cup onion, diced, red or white
    1/2 cup red and green bell pepper, diced
    1/2 tsp table salt
    1/2 teaspoon pepper
    2 cups Egg Beaters® 99% egg substitute (8 large eggs equivalent)
    4 oz lowfat cheddar cheese
    1/3 cup 1% low-fat milk
    2.5 Points for 2 muffins.
    Per Serving (excluding unknown items): 127 Calories; 2g Fat (18.9% calories from fat); 17g Protein; 7g Carbohydrate; 1g Dietary Fiber; 21mg Cholesterol; 824mg Sodium. Exchanges: 0 Grain(Starch); 2 Lean Meat; 1/2 Vegetable; 0 Non-Fat Milk; 0 Fat.

    I saw a recipe similar to these on here or maybe another site - but you lined each muffin tin with the cheap canned biscuits to make a crust - and adds only one point each.
