    Default Eggs Amadeus

    Eggs Amadeus*

    4 eggs
    ľ cup low-fat buttermilk
    Salt & pepper to taste
    1 zucchini, shredded
    Mist of olive or macadamia nut oil
    40 g Pecorino-Romano, Parmesan-Romano or Parmesan cheese, grated & divided

    Break eggs into a bowl, and whisk for scrambled eggs. Add the buttermilk, salt and pepper. Whisk again until creamy.

    Mist the skillet with oil and place over medium-low heat. Add the zucchini and spread about the pan. Add the eggs and step away from the stove for a minute. Do nothing. After the minute, begin to fold eggs back and scramble as usual, working the zucchini into the eggs. When eggs are cooked to preference, remove and plate, dividing evenly. Top each portion with 20 g cheese.

    Serves 2 @ 6 points each

    Ooh, Thanks Paris. I was going to ask you about this when I saw it on your menu the other day. Looks great! I love me some Locatelli cheese!

    Looks great Paris!! Yummm yummmm! I'll have to leave off the cheese, though I may sub rice or soy cheese.

    I made this last weekend for DH and my old college roomie. I added another egg and split it three ways with some 1 pt cinnamon rolls. We all loved it, and it's another great way to eat more veggies!

    Speaking of Eggs Amadeus... now that I am in school and rushing through the AM I tried making this into a crustless quiche and it worked great!

    6 eggs
    1 cup low-fat or fat-free buttermilk
    2 smallish zucchinis, shredded
    2 oz Pecorino-Romano or Parmesan cheese
    Salt & pepper

    Whisk the eggs and buttermilk together. Mist a 7 x 11 casserole with your choice of healthy oil. Spread out zucchini. Spread cheese over zucchini. Pour custard over veggies and cheese. Salt and pepper the top. Place in a 300* oven and bake for 60-70 minutes. Cool and serve or refridgerate for later.

    I just made this dish this morning (for one) since I had all the ingredients--I love zucchini. I used a bit of Montreal steak spice instead of salt & pepper; it's really good in eggs, but be careful since it's very salty. A little goes a long way. Very yummy!
