    Default Apple Peanut Butter Pancakes - Trust me, they are YUMMY!

    I made these tonight when I was having a craving for something filling yet low in points. If you make them as below, it comes out to 5 medium sized pancakes for 5.5 points. They are very filling! You could possibly lower the point value by using reduced fat peanut butter, but I prefer the real deal. Oh and I used Healthy Harvest Applesauce, those who can not find it (I find it at Acme) might want to replace it with any kind of unsweetened natural applesauce. Let me know what you think!

    Ingredients
    1/2 cup oatmeal = 2 points
    1 Healthy Harvest Applesauce individual container = 1 point
    2 egg whites = 0.5 point
    1 tablespoon regular peanut butter = 2 points (I used Skippy PB)
    Cinnamon and Splenda (use your judgement on measurements) = 0 points

    Directions
    Puree the oatmeal until it is almost fine, but with a few pieces bits left, in a food processor. In a bowl, combine oatmeal, splenda, and cinnamon. In another bowl, blend egg whites, applesauce, and PB. I use a hand blender and just mix it all up, it was really easy to do this way. Pour the wet into the dry and mix.

    On a fry pan, sprayed with your choice of cooking spray, pour the pancakes. I used about 1/8 of a cup, and then spread it out with the back of a spoon on to the pan to make about a 4 inch circle. These cook fairly quickly, so don't walk away from them!

    All and all, it made 5 pancakes. I loved them and they were very filling. For those that don't like dry pancakes, you could try some Sugar free or lite syrup of your choice. I know that there are a lot of Davinci syrup fans out there, so you might want to try that as well.

    These sound good but about how much applesauce would equate to your applesauce container? I'm out of applesauce so will have to make them another day but I definitely will.

    The amount of applesauce is 4 oz. (half cup).

    They truely were awesome. I am making them again tonight, and am going to try them with my peach healthy harvest applesauce instead. I'm also going to spread some sugar free jam on them too, maybe so it won't seem quite so dry.

    I'm bumping these up since MoniMac mentioned them again on WW At Home board. I'm going to the grocery store today so I will be making these soon.
