    Be careful! Fat free cool whip has no points if you only eat the amount shown in the container (2 tbs I think) per day, but if you eat more than that the points add up. 1/4 cup of fat free cool whip is 1 point, and believe me 1/4 cup isn't that much..

    I finally tried this last night, and I must say, I am impressed! This is so easy to make and has wonderful flavour. Mine turned out moist, perhaps a bit softish, so I will bake it a tad longer next time, 35-38 min and see if it is firmer. But still delish!

    Here's my lazy version:
    I took one 15oz can of pumpkin puree,
    1 cup of fat free evaporated milk,
    1/2 cup egg beaters and
    1/2 cup of DV Sugar free syrup in Spice Blend flavor (though I bet lots of flavors would be good with this, like amaretto or white chocolate)
    then baked at 450 degrees for 20 minutes then at 350 degrees for 45 minutes.
    Figuring the points for all the ingredients by nutritional info (including the pumpkin) I got 1/4 of the pie is 90 calories, 0 fat, 4 fiber which is 1 point! And since 1 cup of evaporated FF milk is 2 dairy servings, each 1/4 of the pie is also 1/2 a milk serving and it's a veggie serving too. Can't beat that.

    I tried another lazy version today, substituting 1 cup of ff plain yogurt for the evaporated skim milk. It was much thicker than usual, but I still cooked it for the same amount of time. This was not a rousing success.
    The texture was really grainy and the flavor was off. Oh, well, you never know till you try.

    I made this today with low fat milk and egg whites splenda nutmeg and cin. and of course pumpkin. A keeper for sure! I also ran it through the recipe builder and the entire pie is 4 points~ GinaH
    Weight watchers is a tool its up to me how I use it!

    I make these in five small tart pans about 4" across, and shorten the baking atime at 375 to about 25 minutes. That way I can add oatmeal to a just a couple of them, if I wish. Besides that, somehow friend-husband Robert really seems to enjoy sitting down with a whole pie, whatever the size of the pie.

    Great idea Keri!

    I forgot to post my latest, latest version. I blend 1 cup of cottage cheese with the 1/2 cup of Davinci Syrup until smooth and use that as a sub for the milk. I mix that into the 1 can of pumpkin and 1/2 cup eggbeaters and 1 cup of old fashioned oats and bake for 1 hour at 350. It adds a bit more protein and I like the texture better than skim milk.

    I think I've made one of my best ever with 1/4 cup DV Chai Tea concentrate, 2tbs of french vanilla and 2tbs of carmel. YUMMMMMMM!

    Yes, the recipe works out to be 1 point for 1/4 ON YOUR SLIDER, not taking into consideration that there are fractions of points that add up to be WHOLE points. Here is what I mean:

    regardless of whether it was 1 pt per slice or 2 pts. I made this recipe today to go along with my smoked turkey breast. holy cr*p, was it good! even my son liked it and he doesn't like anything.


    gonna keep this one handy for the holidays.

    Roger, I don't think Jeannette is saying it's not 1 point per slice, she's saying that in this case because it's 4 servings the whole pie is not 4 points. Individually the pieces are 1 point each, but if you ate the whole pie it would be 8 points due to the fiber cap. Please correct me if I'm mistaken Jeannette.
    I do agree it's good though. I made one today and it was a struggle not to eat it right then.

    Roger, I add oats to make my lazy version of Crustless Pumpkin Pie with Oatmeal.

    Carol, It's not just me now. Mardee just came up with a new one with Cream of Wheat! I have to try that for the extra iron.
    I've been sticking with 1 cup evaporated skim milk and the combo of 1/4 cup DV Chai tea, 1/8 cup DV Caramel and 1/8 cup DV French Vanilla. It's a winner. I'm just about to have a piece as my afternoon snackie!

    Joanne, do the oats remain mixed through out, or do they kinda sink to the bottom and form a "crust"?

    This seemed so important at 3am this morning that I had to stop myself from getting out of bed to post this question.

    The oats stay mixed throughout. It gives it a lot of substance. I just had some for breakfast this morning before 6 and it's almost 9 and I'm still not in the least bit hungry. Which is saying a lot cause I'm a big eater.

    Ok I have read this whole thread and I must say I am so confused! How many servings should this whole pie make and how many points per serving? Also Pumkin Puree not pie filling? Where do I get this at? I mean Servings and points for this recipe :

    okay, the pie can make as many servings as you want- people here I think generally eat 1/4 of the pie as a serving. 1/4 of the pie ON YOUR SLIDER is 1 point. If you choose to eat the whole pie (no judgement from this quarter), it is 8 points ON YOUR SLIDER. If you're still confused, I pasted the recipe in both 4 serving and 1 serving recipes in the same thread. You are welcome to check the slider with the nutritional information.

    No pumpkin pie filling because that contains sugar- essentailly you just pour it into the pie crust with no other additions. Canned pumpkin is just pumpkin, you have to add the sugar, eggs and milk before making it into a pie.

    Should not be mushy...!

    Did you make yours without the oats? Then it's just like a regular pumpkin pie (without the crust). Stick a knife into the center, and if it comes out "clean" it's cooked.

    It will firm up even more as it "cools".

    I have been following the crustless pumpkin pie experiments with great interest. I have been hesitant to try it because I don't use any artificial sweeteners, so no DaVinci for me. If I were to make this with sugar, or honey, or maple syrup, how much would you all use for one recipe? Thanks buddies!

    The original recipe calls for regular Splenda which should measure spoonful for spoonful as sugar. I believe it calls for 3/4 cup Splenda, so substitute with 3/4 of sugar.
