Though this is a 'cake', it is in one of the many breakfast recipes in a copy of Fitness from June 2002. It would look great with a cup of coffee I think. Crumb Topping:
2 tbsp toasted wheat germ
1 tbsp all purpose flour
1 tbsp brown sugar
1 1/2 tsp butter or stick margarine, cut in small pieces

Cake:
1 cup all purpose flour
1/2 cup whole wheat flour
1 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
4 tbsp butter or stick margarine
2/3 cup sugar
2 egg whites
Grated zest from 2 medium oranges
1 tsp vanilla extract
3/4 cup buttermilk
Cooking spray (doesnt say which kind)
1 cup blueberries

HEAT oven to 350 f.
In a medium bowl, stir together wheat germ, flour and brown sugar. With a pastry blender or a large fork, cut in butter until mixture forms coarse crumbs; set aside. Prepare cake batter. In a large bowl, sift together flours, baking powder, baking soda and salt. In another bowl, beat together butter, sugar, egg whites, orange zest and vanilla. Alternately beat in flour mixture and buttermilk until blended. Pour into a 9-inch round cake pan coated with cooking spray. Scatter bluberries on top and sprinkle with crumb topping. Bake for 45 minutes or until a toothpick inserted in centre comes out clean. Cool on wire rack. Makes 12 servings.
