    Default Bacon-Cheddar-Mushroom Baked Frittata

    Mist of olive or macadamia nut oil
    12 slices cooked bacon of choice
    1 large can mushrooms, drained
    2 oz shredded cheddar
    4-5 large chicken eggs
    1 cup low-fat cow’s milk
    ½ tsp pepper
    ½ tsp salt
    ¼ tsp paprika

    Preheat oven to 300 degrees.

    Mist a 9-inch pie plate with oil. Place the bacon in the pie pan to cover the bottom; break pieces in half if needed. Top the bacon with mushrooms and then cheese.

    In a bowl, whisk together the eggs, milk, salt, pepper and paprika. Pour custard over the bacon, mushrooms and cheese. Bake for 70 minutes. Allow to cool before serving; great both warmed in the microwave or cold from the fridge.

    Serves 8 @ 3 points per slice

    This sounds great! Think I'll put it on next week's menu for dinner w/ some fruit salad. I love making breakfasty foods for dinner as well. Thanks for sharing!

    This sounds great only I'll substitute Morningstar Farms veggie bacon strips for real bacon. I love recipes like this that are hearty and filling!

    Thanks so much for such a great recipe! My DH thought I was buttering him up for something LOL. I made ths, hash brown potatoes, fruit salad & brown sugar banana muffins for supper last night. He claimed the leftovers for breakfast immediately. Will make it again soon...

    Paris- My DH requests this about twice a month for supper. Have you ever tried it w/ sausage instead? Next time I'll experiment & let you know the outcome.

    The verdict is in- DH LOVED it w/ sausage. I like it better w/ the bacon. Eventhough I browned the sausage ahead & rinsed & drained it, it cooked up pretty greasy. That turned me off a bit. Maybe next round, I'll do a pan of each or one w/ one of the veggie crumbles. I plan on serving this for a brunch soon. Have you ever done a double batch? Do you think it'd work well in an 11 X 7 or 13 X 9? That'll be another experiment for me...

    Hi,
    Was making this for the first time, for an Easter party today and realized too late my hubby had eaten all of the shredded FF cheddar cheese! Yikes! Fortunately, I had some FF shredded mozzarella. It was great and got rave reviews! Can't wait to make it again with cheddar cheese.

    Just curious about the points...this is what I came up with:

    1 large can mushrooms, drained
    2 oz shredded cheddar=6 points
    4-5 large chicken eggs=8-10 points
    1 cup low-fat cow’s milk=2 points
    ½ tsp pepper
    ½ tsp salt
    ¼ tsp paprika




    32-34 points total, 4.25 points each


    Am I missing something or calculating wrong?

    I think it's the bacon points. I use a cooked bacon that is 10 points for 12 slices.

    I made it and it was a hit. I used turkey bacon, fat free cheese, and broccoli. I also added a pinch of garlic powder. My parents came up and tried some and loved it. The next one i make will be meatless. I am not a big meat fan and think it would be divine with some tomatoes and onion. Thanks for this keeper of a recipe Paris!
