Thread: low point, easy bran muffins

    Here they are...

    1 1/2 cups flour (i've tried different kinds, they all work)
    2/3 cup brown sugar
    1 tsp baking soda
    1/2 teaspoon cinnamon (I also use pumpkin pie spice in some, and double it, my kids like it that way)
    1/4 tsp salt
    1/4 egg subsitute
    1 1/2 cups fat free milk
    2 tablespoons vanilla fat free yougart
    3 cups bran flakes
    1/3 cup raisins

    400 F

    mix all dry ingredients with exception of bran flakes and raisins

    in seperate bowl mix wet ingredients

    combine the 2, add bran flakes and raisins. bake in sprayed muffin tins for 25-28 minutes...
    NOTE: muffins papers will NOT work, not enough oil, and they stick BIG time...

    I also use dried powder milk and water...

    as well, today I tried orange juice instead of milk, and chopped 2 tablespoons choco chips small instead of raisins...my kids and I loved them. Enjoy. Nearest I figure they are a point and a half...lots of FIBER!

    I also noticed I don't get hungry in the mid morning when I eat these. THey are great, easy to take along

    These look really good. How many points are in a muffin? I'd like to give them a try because I love muffins, but avoid them since they are usually so high in points.

    As close as I can figure, 1 1/2 points. No fat...lots of bran is our friend! I rarely go without these now, they help me so much!
