This is not only a breakfast food, but dinner, too! It is so good. It makes 4 servings @ 6 points a serving.

Tomato Olive Frittata
Serves 4 and is 6 points a serving

3 large eggs (divided)
1 TBSP flour
2 egg whites
tsp ground black pepper
2 cups shredded 50% light cheddar cheese { NOTE: You can use any kind of RF cheese}
1 can (3.8 oz) of drained sliced black olives
cup thinly sliced green onions
1 cup seeded chopped tomato
1 tsp Italian seasoning

Prep Time = 10 minutes
Cooking time = 35 to 40 minutes

Heat oven to 350 degrees. In medium bowl, whick 1 whole egg & flour until blended. Whick in remaining eggs, whites and pepper. Stir in cheese, olives, green onions, tomato and seasonings. Spread in an 11 by 7 inch baking dish coated with Pam. Bake 35 to 40 minutes or until golden & center is set. Makes 4 servings.

Per Serving = 259 calories, 9g carbohydrates, 23g protein, 16g fat (7.6 saturated) 189mg cholesterol, 2g fiber, 656mg sodium. Cals from fat = 56%

Other notes:

  • I added garlic powder & minced garlic</font>
  • I baked mine in an 13x9 pan. It came out "thinner" than I would have liked. I would suggest baking it in a 9x9 pan & increasing the cooking time to 40 to 50 minutes.</font>
