Thread: Hearty Muffin Recipe

    These are a wonderful hearty muffin.

    2Cups less 2Tbl Wheat Flour
    2Tbl Wheatgerm
    1Cup Sugar
    2tsp baking powder
    2tsp ground cinnamon
    1/4tsp nutmeg
    1/2tsp baking soda
    1/4 tsp salt
    2Cups finely shredded carrot
    1Cup finely chopped apple
    1/2Cup Raisins
    1/2Cup chopped nuts
    4 egg whites
    3/4cup unsweetened apple sauce
    2tsp vanilla

    Mix dry ingredients, carrot, apple, raisins, nuts and coconut together in one bowl. In a seperate bowl mix egg whites, apple sauce and vanilla, add to dry ingredients.. mix just until the batter is moist, do not overmix or the muffins will be tough.

    Using muffin cups, spray with cooking spray or line with papers and fill cups until almost full. Bake at 350 for 30 minutes or until muffin springs back when lightly touched.

    If using muffin tops pans (my preference) spray with cooking spray and fill 1/4-1/3C scoops. Bake at 350 for 15-20 minutes, check at 15. If muffin springs back when lightly touched.. it's done!

    Cool in pan on the wire rack for 5 minutes and then remove from the pan and cool on the rack. Best warm.. or at room temprature.

    The mastercook calculations are:

    cal = 2748
    fat = 59 g
    fiber = 58 g

    If you make 12 muffins = 4 pts per muffin.

    When I made these I used pear instead of apple.. and it was wonderful and I'm sure you could substitute zuchinni for the carrot if you so choose. When i made these they were scarfed up by everyone, including my teenagers!
