    Hi good Buddies,

    Bought some sun dried tomatos a couple months ago on a whim. Haven't opened the package yet!

    Ideas, suggestions for using these lycopene rich gems?

    Rehydrate in warm water, drain, chop and add to the pasta sauce of your choice (i.e., Walden Farms Alfredo Sauce). Or rehydrate, dice and add to couscous or bulgar - with some chopped black olives, red peppers, green onions, it makes a divine salad. They can also be added to cream cheese, hummus, tofu spread, etc., etc.

    I make a pita pizza and I toss some on it(cut up but not rehydrated)--YUMM.
