    Hi all,

    I made this one for dinner tonight and it was YUMMY!!!!! The recipe called for 2 servings for 10 points each, but the servings were honestly HUGE!!!!! You could cut it down, serving-wise, definitely!

    BASIL SHRIMP WITH FETA AND ORZO

    Servings: 2
    Points per Serving: 10

    INGREDIENTS
    1 regular-size foil oven bag
    Cooking spray
    1/2 cup uncooked orzo (rice-shaped pasta)
    2 teaspoons olive oil, divided
    1 cup diced tomato
    3/4 cup sliced green onions
    1/2 cup (2 ounces) crumbled feta cheese
    1/2 teaspoon grated lemon rind
    1 tablespoon fresh lemon juice
    1/4 teaspoon salt
    1/4 teaspoon black pepper
    3/4 pound large shrimp, peeled and deveined
    1/4 cup chopped fresh basil

    INSTRUCTIONS

    Preheat oven to 450F.

    Coat inside of oven bag with cooking spray. Place the bag on a large shallow baking pan.

    Cook the pasta in boiling water 5 minutes, omitting salt and fat; drain. Place the pasta in a large bowl. Stir in 1 teaspoon oil and next 7 ingredients (1 teaspoon oil through pepper). Place the orzo mixture in prepared oven bag. Combine shrimp and basil. Arrange shrimp mixture on orzo mixture. Fold edge of bag over to seal. Bake at 450F for 25 minutes or until the shrimp are done. Cut open bag with a sharp knife, and peel back the foil. Drizzle with 1 teaspoon oil.

    YIELD: Yield: 2 servings (serving size: 1 cup orzo and about 5 ounces shrimp).

    Christine,

    This sounds heavenly! It could be a lovely dish for family or for company! This will put my rapidly growing basil to some excellent use!!

    this was delicious! My mom and I made it for dinner tonight. We had a small salad on the side. this one is definatly a keeper. [img]graemlins/thumbup.gif[/img] Yum Yum

    Boy this looks like a good one! I have some shrimp in my freezer, so I'm going to give it a try. Don't have the bags, but I am going shopping tonight, so I will pick them up.

    This was so good and my company and family didn't know it was a ww recipe. With a veggie and salad and homemade bread(recipe from Legal Eagle) it was a winner. Thak you

    This was excellent! Thanks for posting this recipe.

    I only cooked it for 20 mins, as I saw in reviews of this recipe on another site that some times the shrimp were overdone after 25 mins. 20 mins worked perfectly for me. Shrimp were just right.

    This sounds great, being on Core I am only going to have to count the orzo and feta cheese... I can't wait to try it....

    OMG, I just made this and it is sooo good! Even DH, who normally doesn't like this sort of thing thought it was great! Definitely makes enough for 3, and really satisfies your senses!

    I made a version of this from WW Online last night. It was amazing!!!

    Here's my recipe:

    Greek Shrimp w/ Orzo 4 servings/8 pts

    12 oz uncooked orzo
    2 tsp olive oil
    1/2 cup onion(s), chopped
    1 medium green pepper(s), chopped
    2 medium garlic clove(s), minced
    28 oz canned diced tomatoes
    1 tsp dried oregano
    1 pound shrimp, medium-size, peeled and deveined
    1/4 cup basil, fresh, chopped
    4 tsp feta cheese, crumbled


    1. Cook orzo according to package directions without added fat; drain and set aside.

    2. Meanwhile, heat oil in a large saucepan over medium heat. Add onion, pepper and garlic; cook until soft, about 3 minutes. Add tomatoes and oregano; bring to a simmer. Add shrimp and cook until shrimp are bright pink and cooked through, about 5 minutes.

    3. Stir cooked orzo into shrimp mixture; stir to combine. Remove from heat and stir in basil. Spoon about 1 1/2 cups of orzo-shrimp mixture onto each of four plates and top each with 1 teaspoon of feta.
