    ~~Fab 40's~~
    Hoisin sauce gives this enticing stir-fry its unique spicing. It's generally available in the international section of the supermarket.

    Makes 4 Servings

    1 tablespoon + 1 teaspoon sesame oil
    1 cup oyster mushrooms, sliced
    1 cup thinly sliced red bell pepper strips
    1 cup chopped scallions
    1 tablespoon minced garlic
    1 1/2 teaspoons grated fresh ginger root
    1 pound 4 ounces peeled and deveined
    medium shrimp, tails removed
    1 cup bean sprouts
    1 cup snow peas
    3/4 cup canned water chestnuts
    3 tablespoons hoisin sauce
    2 teaspoons rice vinegar
    1/2 teaspoon salt
    2 1/2 cups cooked rice noodles
    2 cucumber twists to garnish (optional)
    2 radish flowers to garnish (optional)

    In wok or large deep skillet, heat oil; add
    mushrooms, bell peppers, scallions, garlic
    and ginger. Stir-fry over high heat 1
    minute, until vegetables begin to soften.
    Add shrimp, bean sprouts, snow peas and
    water chestnuts. Stir-fry 2?3 minutes,
    just until shrimp turn opaque.
    Stir in hoisin sauce, rice vinegar and salt,
    and stir-fry 1 minute more, just until sauce
    bubbles.
    Line serving dish with noodles; spoon
    shrimp mixture in center. Garnish with
    cucumber and radishes, if desired.

    PER SERVING: 363 Calories, 34 g Protein, 7 g
    Fat, 39 g Carbohydrate, 880 mg Sodium, 216 mg Cholesterol, 2 g Dietary Fiber

    Sound great. Love those water chestnuts! Would like to try this with Mud Bugs (Crayfish) or Langostino.... What the market here calls them to make them sound more exotic.
