This is just too good not to share!

I spray the fish fillets with non-stick (olive oil or butter flavor)and cook them in my George Foreman grill and shave 9 points off the total. See what you think.

4 6oz halibut fillets (good with steaks, too)
1 tbsp fresh ginger, finely chopped
3 cloves fresh garlic, finely chopped
2 tbsp fresh cilantro, finely chopped
1 large fresh tomato, peeled and diced
juice of 1 lemon
salt & pepper to taste

Spray and cook the halibut 2 minutes on each side. Remove the fish to a warm serving platter.

Spray some olive oil & some butter non stick into a large skillet. (You could use 1 tbsp of real olive oil plus 1 tbsp real butter for best results - it would be 6 points)

Add ginger, garlic, tomatoes, cilantro to the skillet and simmer for 1 minute. Salt and pepper to taste, stir in lemon.

Spoon sauce over and around the halibut and serve at once with curried jasmine rice (add those points). Goes real well with a rich full bodied Chardonnay.

16 points total with only nonstick, 22 points using 1 tbsp each oil and butter. 4-5 points per serving.
