    Anyone have any good low-point Halloween-themed recipes? I'm thinking appetizers, fun drinks, etc.

    Ghoulish Mexican Pizza with Black Olives


    8 ounces lean ground turkey
    1 to 3 teaspoons chili powder
    1 cup chunky-style salsa
    1 cup vegetarian refried beans
    1 14-ounce package Italian-Style Pizza Crust
    1-1/2 cups reduced-fat shredded cheddar cheese
    4 tablespoons black olive slices
    Vegetable oil spray


    Preheat oven to 375 degrees. Lightly coat frying pan with vegetable oil spray, then sauté ground turkey until browned -- break up any clumps. Drain. Blend in salsa and chili powder. Set aside. In lightly sprayed sauce pan, heat refried beans until bubbly. Spread refried beans evenly over pizza shell. Top with ground turkey mixture and sprinkle with cheese. Bake for seven to ten minutes, or until cheese is melted. Decorate with black olive slices. Makes eight large slices or 16 appetizer slices.

    Twisted Pasta Bean Toss

    2 medium red onions, thinly sliced
    2 large garlic cloves, minced
    1 teaspoon vegetable oil
    5 carrots, peeled, sliced julienne style
    2 cups raw broccoli florets
    3 tablespoons Worcestershire sauce
    2 tablespoons dried or 4 tablespoons fresh basil
    2 cups red kidney beans, cooked, or a 15-ounce can red kidney beans, rinsed
    2 cups white kidney beans, cooked, or a 15-ounce can white kidney beans, rinsed
    12 very ripe plum tomatoes, diced, or a 16-ounce can salt-free tomato sauce
    1 pound penne or small pasta, cooked
    1/2 cup Parmesan cheese


    Follow directions on the package for boiling pasta. While pasta is cooking, in a large frying pan, saute onions and garlic in oil until tender, about two minutes. Add remaining vegetables, tomato sauce, Worcestershire sauce, and basil. Simmer for four minutes. Add beans. Simmer for another one to two minutes or until vegetables are tender. Add hot pasta and cheese. Toss and serve. Makes 15 cups.

    Spooky Party Mix

    1/2 cup raisins
    1/2 cup dates, chopped
    1/2 cup Life, Wheat Chex, Shredded Wheat, or your favorite cereal
    1/2 cup pretzels, unsalted, broken into pieces
    1/4 cup semi-sweet chocolate chips


    Toss all ingredients together. Makes 2 1/4 cups

    Trick or Treat Taco Popcorn

    12 cups air-popped popcorn (about 1/3 cup kernels)
    2 teaspoons taco seasoning
    1 tablespoon light margarine, melted


    Place popped popcorn in a large bowl. Melt margarine. Drizzle margarine over popcorn and mix well. Sprinkle taco seasoning on, one teaspoon at a time, tossing popcorn to coat evenly. Makes 12 cups.

    Devilish Dilly Dip and Vegetables

    1 cup nonfat plain yogurt
    1/3 cup light mayonnaise
    1 tablespoon dill weed
    2 teaspoons onion powder
    1 teaspoon sugar
    An acorn squash
    Assorted fresh, cut vegetables


    Combine all ingredients except squash and vegetables. Refrigerate two to three hours to blend flavors. When ready to serve, carefully cut off top of acorn squash with a sharp knife. Hollow out center of squash and insert a small bowl. Spoon dip into bowl and place on large platter surrounded by vegetables. Makes about 22 tablespoons of dip.

    Pumpkin Spiced Ice Cream Pie with Fudge-Dipped Apricots

    3 cups fat-free or low-fat vanilla ice cream or frozen yogurt
    2 teaspoons pumpkin pie spice
    1 eight-inch ready-to-serve, low-fat graham cracker pie crust
    1 cup dried apricots
    1 1/2 tablespoons fat-free fudge sauce


    Spoon ice cream into large bowl and allow to soften slightly. Sprinkle with pumpkin pie spice and blend. Spoon ice cream mixture into pie crust shell. Cover and freeze until firm. When ready to serve, dip each apricot halfway into fudge sauce and place to form a decorative border on top of ice cream pie. Makes 8 slices.

    Kooky Cocoa Candy Corn Meringues

    3 egg whites
    1/2 teaspoon chocolate extract
    1/4 teaspoon cream of tartar
    3/4 cup sugar
    3 tablespoons cocoa
    Small tube of chocolate decorating icing
    Candy corn


    Preheat oven to 250 degrees. In a large bowl, beat egg whites and extract until foamy. Add cream of tartar and continue beating. Slowly add sugar, a tablespoon at a time, and beat until egg whites form stiff peaks. Sprinkle cocoa over egg whites and gently fold in. Spoon a heaping tablespoon of meringues onto wax paper-lined cookie sheets. Flatten slightly. Bake meringues for one hour. After one hour, turn off oven and let meringues set in oven for an additional hour, or until completely dry, with oven door closed. Remove meringues from oven and cool on wire racks. Dot 1/4 teaspoon of icing in the center of each meringue. Top with a candy corn. Makes 24 cookies.

    Halloween Chili
    1 1/4 Pounds ground goblin gizzards (ground beef 15% fat)
    1 Medium eye of Cyclops (onion)
    1 15 Oz. Can soft shelled beetles (kidney beans)
    1 28 Oz. Can blood of bat (V-8 juice)
    1/8 Teaspoon pureed wasp (prepared mustard)
    1/4 Teaspoon common dried weed (oregano)
    1 Dash Redtailed hawk toenails (crushed red pepper)
    2 Teaspoons ground sumac blossom (chili powder)
    1 Teaspoon hemlock (honey or sugar)
    1/2 Cup fresh grubs (sliced celery)
    1 Tablespoon eye of Newt (pearled barley)
    1 Tablespoon dried maggots (uncooked rice)
    Water from a stagnant pond (tap water)
    Brown the gizzards
    add chopped eye of cyclops and simmer until the pieces of eye become translucent
    add blood of bat and soft shelled beetles, bring to a slow bubbling boil.
    add the common weed, maggots, toenails, sumac, grubs, hemlock, eye of newt and the pureed wasp.

    Jack O'Lantern Fruit Cup
    Items you will need:
    1 Orange
    Choice of assorted fresh or frozen fruits
    Wash and chop assorted fruits and mix together in a bowl.
    Set aside.
    Slcie off the top of an orange (as you would for a Jack-O-lantern)
    Scoop out the inside of orange using a knife and spoon.
    Add the juice from the orange to your fruit salad
    Carve a face into the orange
    Fill the orange with the fruit salad, allowing the fruit to pop out of eyes and mouth

    SEVERED FINGERS

    Recipe By: Martha Stewart
    Servings: 30
    Serving Size: 1 finger cookie
    Points per serving: 2

    2 tablespoons red food coloring
    30 whole almonds -- blanched
    2 whole eggs
    1/4 teaspoon vanilla extract
    1/2 cup unsalted butter -- at room temperature
    1/2 cup powdered sugar
    5 tablespoons sugar
    Pinch salt
    1 2/3 cups all-purpose flour

    1. Heat oven to 350°. Line two baking sheets with Silpats, and set aside.
    2. Place food coloring in a shallow bowl. Using a small paintbrush, color one rounded half of each almond. Set aside to dry.
    3. Separate 1 egg. Set aside the white. In a small bowl, whisk together yolk, remaining egg, and vanilla. Set aside.
    4. In the bowl of an electric mixer fitted with the paddle attachment, combine butter, confectioners’ sugar, granulated sugar, and salt. Beat on medium speed until well combined. Add egg mixture, and beat until smooth, about 2 minutes. Add the flour, and mix on low speed just until incorporated. Wrap the dough in plastic, and chill until firm, 20 to 30 minutes.
    5. Divide the dough in half. Work with one piece at a time, keeping remaining dough covered with plastic wrap and chilled. Divide the first half into fifteen pieces. On a lightly floured surface, roll each piece back and forth with palms into finger shapes, 3 to 4 inches long. Pinch dough in two places to form knuckles. Score each knuckle lightly with the back of a small knife. Transfer fingers to prepared baking sheets. Repeat with remaining dough.
    6. When all fingers are formed, brush lightly with egg white. Position almond nails; push into dough to attach.
    7. Bake until lightly browned, about 12 minutes. Cool completely.

    Planting instructions:
    Fill a container 3/4 full with uncooked lentils or unpopped popcorn. Pour crushed chocolate wafers/cookies over beans/popcorn. Place fingers upright in container.

    1 1/4 cup(s) water
    1/4 cup(s) unsweetened applesauce
    3/4 cup(s) fat-free egg substitute
    8 oz light cream cheese, softened
    3 tbsp orange juice
    3/4 cup(s) fat-free (skim) milk
    3 1/3 oz fat-free, sugar-free instant vanilla pudding mix
    1/2 oz decorating icing, black

    Instructions

    Preheat oven to 350ºF. Coat two 12-cup muffin tins with cooking spray.


    Prepare the cake mix according to package directions, except use applesauce and egg substitute in place of oil and whole eggs; pour batter into muffin tins. Bake for 20 minutes.


    Meanwhile, beat cream cheese with an electric mixer on low speed until smooth. Gradually add orange juice while continuing to beat.


    Beat together skim milk and pudding in a separate bowl for 2 minutes (add a few drops of red and yellow food coloring to turn the frosting orange, if desired). Fold cream cheese mixture into pudding mixture.


    After cupcakes have cooled, spread each one with frosting; design your own faces on each with icing. Store any uneaten cupcakes in refrigerator.

    Make your crudites look like a skeleton:

    Hollow out a head of cabbage and fill it with the dip for the skeleton's head. For his spine, skewer some sliced green and yellow squash. Use carrots, celery, etc. for the rest of his body parts. I saw this at a party and it was really cute. :eek:

    Maybe this is more of a fall theme...

    Cut up apples into chunks and warm some fat free caramel dip (small crock or fondue pot) for dunking...

    Oh, I just thought of something else...

    If you are providing alcohol, you could have sugar-free red jello shots in small, clear cups...just add the tequila instead of the water to mix it up...

    These were surprisingly a big hit at our Halloween party last year.
    "Bloody eyeballs"
    Take radishes and strip part of the red so that it looks like bloodshot eyes. Carve out the center & insert a green olive with pimento. Look cool & low points.
