Thread: Crockpot Thai Chicken

    Thai Chicken for the Crockpot

    4 (4-oz) boneless skinless chicken breasts
    3/4 cup salsa
    1/4 cup whipped peanut butter*
    2 tablespoons lime juice
    1 tablespoon soy sauce
    1 teaspoon grated ginger root
    2 tablespoon chopped fresh cilantro

    Place chicken breasts in the slow cooker.

    Mix the remaining ingredients except the cilantro together in a small bowl and then pour over the chicken.

    Cook on low for 8 10 hours. Remove chicken with slotted spoon. If sauce is very thin, mix with 1 tablespoon cornstarch. Pour sauce over chicken, sprinkle with cilantro, and serve hot.

    Serves 4 @ 5 Points Each

    * If you are using regular PB the points change to 6 points each.

    I made this and served it over Thai noodles. My DS, who is usually negative about anything Asian-y that I cooked, scarfed it down in two seconds. I did tweak the recipe a bit, decreasing the PB, using Vietnamese fish sauce instead of the soy and adding snow peas and red pepper strips to cook for the last 5 minutes.

    I have this recipe in my pilsbury slow cooker cook book. I made it last week. It was wonderful!!!!! so yummy My whole family tore it up! You will not regret trying this. I served it with green beans and lipton Thai seasme noodles... I had a 1/3 of cup of noodles for 3 points 3 oz chicken breast with a little of the sauce I counted it as 5 points total....

  10. Question

    Okay, I can imagine that whipped peanut butter is just what it is, but does one purchase it this way or does one whip it herself? (Don't want any extra points for non-whipped PB donchaknow.)

    Whipped peanut butter refers to Peter Pan brand whipped peanut butter.

    I made this last night and it was great! I cut my chicken breasts into strips before crocking, and at the end threw in some frozen baby carrots and broccoli. I had mine with 1 cup of whole wheat pasta, and the rest I tossed with regular spaghetti for my daughter and husband. Very good! Thanks Paris!:bcbsalute

    OH MY GOSH!
    DH and I tried this recipe Monday, and are having the leftovers tonight. First word out of DH's mouth... KEEPER! This is excellent. I served each portion with 2 ozs. of Dreamfield's pasta. A million thanks once again Paris! I salute you!

    I made this today. I came back from my WW WI and the first thing my husband said was that chicken recipe was wonderful. It's a good thing he liked it because I thought it would be good so I doubled the recipe. So many of your recipes are great. One that I repeat often is Minestrone Soup. This Thai chicken recipe will be another one. Thanks so much for sharing.
