Thread: Chicken and Stuffing

  1. #1

Here is a recipe I made yesterday. Very good, even got my 8 year olds approval.
Double check your points depending on how much chicken you use.

Chicken and Stuffing 7 points/6 servings

6 boneless skinless chicken breasts (I used a bit over a pound)
1 box stove top stuffing mix
1 can 98% FF cream of mushroom soup (I used the cream of chicken)
1/2 cup water or chicken bouillon

Spray a 3 1/2 quart crockpot with cooking spray. Add chicken breast. Combine stuffing, soup and liquid. Spread over chicken. Cook on low 6-8 hours.

I made this again last night, but I used turkey breast and cream of chicken soup. In addition we had some ff chicken gravy and green beans. GREAT meal!

I made this recipe and it cooked on low for 5 1/2 hours. The chicken breast was on the dry side. I am new to crockpot cooking and would appreciate any tips on cooking chicken or pork in the crockpot as my experience is it always comes out dry. Thanks!!

This looks good. I might try skinless chicken thighs; not as dry as breasts. I'll let you all know how it turns out.
