Thread: Peanutty Chicken Breasts

    1/4 cup crunchy peanut butter
    2 tablespoons low sodium soy sauce
    1 tablespoon minced onions
    1 tablespoon minced parsley
    1 clove garlic -- crushed
    dash Tabasco sauce
    1/8 teaspoon ground ginger
    6 each boneless skinless chicken breasts -- 5 oz half-breasts
    2 tablespoons low sodium soy sauce
    2 tablespoons honey
    10 1/2 ounces low sodium chicken broth
    1 tablespoon cornstarch

    Mix peanut butter, peanuts, 2 tbs. soy sauce, onion, parsley, garlic, pepper sauce, and ginger. Spread on each chicken breast. Place in slow-cooking pot. Mix remaining 2 tbs. soy sauce with honey, and broth; pour over chicken. Cover and cook on low for 4 to 5 hours. Remove chicken from pot. Turn control to high. Dissolve cornstarch in small amount of cold water; stir into sauce. Cook on high for about 15 minutes.

    Per Serving: 248 Calories; 6g Fat; 37g Protein; 13g Carbohydrate; 1g Dietary Fiber; 70mg Cholesterol; 816mg Sodium. Exchanges: 0 Grain(Starch); 8 Lean Meat; 1/2 Vegetable; 1 Fat; 1/2 Other Carbohydrates.

    Ooops - I forgot to change the instructions... the original recipe called for creamy peanut butter and 2 tablespoons of chopped peanuts. I didn't have any chopped peanuts so I used crunchy peanut butter!!

    A friend of mine made this too and she sprinkled some chopped peanuts on top after plating.

    Oh Mary - this sounds so YUM! I can see it on my plate now, with a side of bulgur and steamed snow peas!

    Since I only buy Better 'n Peanut Butter, which is creamy, I'll try the sprinkling of chopped nuts on top. I bet a little chopped fresh cilantro in this would give it a Thai flair....
