Thread: Old-fashioned Rice Pudding - 3 points

    ~Old-fashioned Rice Pudding~

    Serves 6 (2/3 cup)

    3 cups cold cooked rice
    1 1/2 cups (one 12 ounce can) Carnation Evaporated Skim Milk
    1/2 cup water
    1/2 cup pourable Splenda or Sugar Twin
    1 tablespoon vanilla extract
    2 tablespoons reduced-calorie margarine
    1 1/2 teaspoons ground cinnamon
    3/4 cup raisins

    Spray a slow cooker container with butter-flavored cooking spray.
    In prepared container, combine rice, evaporated skim milk, water, and Splenda. Stir in vanilla extract, margarine, and cinnamon. Add raisins.
    Mix well to combine. Cover and cook on LOW for 2 to 3 hours. Mix well before serving.

    HINT: 2 cups uncooked instant rice usually cooks to about 3 cups.

    3 points per serving

    Dh LOVES rice pudding, but hates raisins, so I'm going to leave those out. Does anyone know if/how much that changes the points?

    Also, I'm thinking of next time trying this recipe later using brown rice instead of instant white. I imagine that would change the points too.

    3/4 cups of raisins is 6 points. So it would make it 2 points per cup. I don't think the brown vs. white rice will change the points at all. At that point it would probably be good to recalculate everything with the actual ingredients you will be using so that you know it's accurate.
    Char made "rice" pudding with bulgur a few weeks ago. That would certainly bring the points down.

    Thanks! (Re: raisins).

    I'll have to try running the recipe thru mastercook using brown rice instead of white. I think it might lower it slightly, as white rice = 5pts a cup, and brown =4. [img]smile.gif[/img]

    I am bumping this up because when I ran it thru E-tools it turns out to be 5 points for six servings. It sure is good, but not sure if 2/3c is worth 5 points to me. 3 points definitely but
    I really don't want to spend 5

    Hi Terrilyn. I made the rice pudding yesterday. I think I let it cook alittle too long . It got kinda dry. I think when I eat the portions that I froze, I will add alittle skim milk to it and heat it up. What do you think. It tasted good though, I think it was just in the pot too long. Janet

    I made the recipe with ICBINBS (2 tbls.)instead of margerine; and 1/2 cup of raisins instead of 3/4c. Then I ran it through WW etools and I got 3 pts.

    I used:

    3 cups of cooked cold white rice
    12oz. Carnation skim elvaporated milk
    1/2 cup raisins
    4 oz Splenda Pourable
    1 tblsp. ground cinnamon
    1 tbslp. Vanilla extract
    1 oz. ICBINB spray. I just poured out an ounce
    1/2 cup water

    I churned it through etool with 6 servings and got 3 points.

    After I cooked it I weighed the whole amount/divided the amount by 6 and then dish out and weighed out 6 servings for 3 points.

    I hope this helps those of you who want to keep this at 3 pts.
