Thread: "Mexican" Lasagna

    This is a quick, easy weeknight meal.

    "Mexican" Lasagna, from Cooking Light
    Servings: 6
    Points per serving: 5

    -2 c. frozen whole-kernel corn, thawed (I have used canned or fresh as well)
    -1/3 c. sliced green onions
    -2 tsp. ground cumin
    -2 tsp. dried oregano
    -1 15-oz can black beans, rinsed and drained
    -1 14.5-oz can diced tomatos with basil, garlic, and oregano
    -1 4.5-oz can chopped green chiles
    -4 6" corn tortillas
    -cooking spray
    -1 1/2 c. (6 oz) preshredded reduced fat cheese--I've used Sargento Mexican four cheese blend, Monterey Jack, and Cheddar, all with good results
    -6 T. plain low-fat yogurt (optional)

    1. Preheat oven to 400 degrees.
    2. Combine first 7 ingredients in a bowl. Place 2 tortillas in an 11x7 inch baking dish coated with cooking spray. Spoon half of corn mixture over tortillas. Top with half of the cheese. Repreat layers; end with cheese. Bake at 400 degrees for 15 minutes. Let stand 2 minutes. Top each serving with 1 tablespoon yogurt, if desired.

    So I seem to have bought wheat tortillas instead of corn tortillas. Are corn tortillas the hard chip like ones? Do you think I can use wheat instead? I know that will affect the point value, but will the recipe still work?

    Corn tortillas are soft, but made from corn rather than flour (wheat). They have a much different flavor, and usually lower point value due to fiber. You could try it, I bet it'd be fine.

    I subscribed to this thread a while ago and just realized I never made this! I think I might make it tomorrow for dinner... sounds great!

    Haha - I did the same thing (subscribe). I really use the subscribe feature to bookmark recipes..
    Anyway, I will try the recipe tomorrow and let you know how it goes.
    Are corn tortillas easy to find? Like, at a normal grocery? Or do you need a specialty store?

    Yeah, I just bought some tonight! They are about 6in across and only a point a piece. You can get white corn or yellow. I like the white better. They're right next to the flour tortillas in every store I've been in.

    Well, it turned otu GREAT with the wheat tortillas. I counted it at 6 pts/serving.
    I had a friend over for dinner and she was fainting over it too. Can't wait to eat it for lunch!!
