    Hi everyone, The following recipe originated in Joanna's Lund's monthly newsletter. When I lst. made it, it was OK, but higher in points, and lacking somewhat in taste, I thought. DH likes red peppers enough that I reworked the pie to bring down the points and jazz up the taste. This is what I have come up with. DH is crazy about it.

    Red Pepper Pie

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    Saute the following in Olive Oil
    Pam-sprayed fry pan, then set aside
    2 cups red pepper* -- chopped
    1 medium onion* -- chopped
    1 tablespoon garlic* -- (jarred)minced
    1/4 teaspoon Lawry's Lemon Pepper seasoning*

    Combine the following dry ingreds.in
    separate bowl
    2/3 cup milk non-fat dry
    1/2 teaspoon All-purpose seasoning*
    1/8 teaspoon garlic powder*
    1 teaspoon dried basil*

    Whisk In
    1 cup water

    then Whisk in
    3/4 cup egg beaters® 99% egg substitute &
    1 T. liquid butter buds

    Combine the following 3 ingreds., & then
    Whisk into batter
    3/4 cup flour
    1 teaspoon baking powder*
    1/4 teaspoon salt*

    put pepper/onion mixture in pam sprayed pie
    plate

    Add the following on top
    2 ounces feta cheese
    1/3 cup real bacon bits-Hormel

    Pour batter mixture over everything in pie plate.

    Bake 30 mins. @ 400

    Per Serving (excluding unknown items): 148 Calories; 3g Fat (24.1%
    calories from fat); 8g Protein; 17g Carbohydrate; trace Dietary Fiber;
    10mg Cholesterol; 413mg Sodium. Exchanges: 1 Grain(Starch); 1/2 Lean
    Meat; 1/2 Fat.

    NOTES : 6 servings // 3=P each
