    Cheese-Stuffed Manicotti
    Serves 5-6; 5 WW points per serving

    Tomato Sauce
    1 clove garlic, minced
    1 teaspoon olive oil
    2 cans (8 oz. each) unsalted tomato sauce
    2 cans (16 oz. each) unsalted tomatoes
    1-1/2 teaspoons oregano leaves
    1 tablespoon chopped parsley

    2 cups non-fat cottage cheese
    1 cup part-skim ricotta cheese
    3 tablespoons freshly grated Parmesan cheese
    2 egg whites
    1/4 cup chopped parsley
    Dash pepper
    8 oz. uncooked manicotti shells (15 pieces)
    1 cup water
    Preheat oven to 375 degrees.

    Prepare sauce: Sauté garlic in olive oil. Add tomato sauce and tomatoes slowly. Stir in oregano and parsley. Bring to boil and simmer covered for 20 minutes to 2 hours, stirring occasionally.

    Makes 5 cups

    Combine filling ingredients and stuff uncooked manicotti shells using small butter knife. Fill bottom of 9 x 13 inch casserole dish with 2 cups tomato sauce. Arrange stuffed manicotti shells in a single layer over sauce side by side. Cover dish with foil and bake for 3 cups sauce and pour 1 cup water over sauce. Cover dish with foil and bake for 50 minutes. Remove foil and bake another 10 minutes.

    PER SERVING: CALORIES: 264 (20% from fat); FAT: 5.9g (SAT 2.9g); CHOL: 18.2mg; FIBER: 4.8g; SODIUM: 430mg.

    Thanks this sounds fantastic! I love stuffed pasta. I bet this would work well with jumbo shell past too. Another option to make more filling for the same points, would be to add a package of drained+thawed frozen spinach. All you would have to do is add the points for any extra pasta.
