    Meatless Sloppy Joes
    Makes 4 servings; 4.2 WW points per serving

    2 cups thinly sliced onions
    2 cups chopped green peppers
    2 cloves garlic, finely chopped
    2 tbsp. ketchup
    1 tbsp. mustard
    1 can (about 15 oz.) kidney beans, mashed
    1 can (8 oz.) tomato sauce
    1 tsp. chili powder
    Cider vinegar
    2 sandwich rolls, halved

    Spray skillet with cooking spray. Add onions, peppers and garlic. Cook and stir 5 min., stirring frequently. Add 1/3 cup vinegar if dry. Serve on halves.

    Exchanges: starch/bread, 3 veg, 1/2 fat
    Per serving: cal 242, fat 2 g, sat fat <1g, chol 0 g, sod 994 mg, carb 48 g, fib 10 g, prot 10 g, cal 102 mg
