Thread: Winter squash

    I have always stuffed winter (acorn/butternut) squash with sweet fillings like fruit, nuts and cinnamon. I've been trying to find another way to serve it that is more like a meal than a sweet side or dessert. Anyone have any favorite recipes for either type of squash?

    I just made a recipe that I adapted from Martha Stewart Baby. It's a shepherd's pie prepared in an acorn squash. You bake 3 squashes and scoop the insides out of one. Then you mash the insides with one boiled potato. For the filling I used Morningstar Farm Burger-style Crumbles but TVP would be good too. Sautee with a chopped onion, a chopped rib of celery and some oregano, salt, pepper. Fill the four squash halves with the crumble mixture and top with the squash/potato mixture. It was good and made a very cute presentation. Or you could scoop all the squashes and layer it in the bottom of a baking dish and layer the other ingredients.
