Thread: Spinach Pie - Spanokapita - 4PTs

    I just made this great dish last night from one of my WW recipe books...but I reduced the points a bit and it still turned out great...Anyway here's the recipe:

    Spinach Pie
    ---------
    3 sheets phyllo (thaw in fridge or on counter, not in microwave)
    2 pkgs chopped frozen spinach
    3/4 c crumbled feta cheese
    2/3 c low fat cottage cheese
    8 green onions sliced
    1 clove garlic minced or pressed
    1/2 t dill
    1/2 t oregano
    2 eggs or 1/2 c egg substitute

    Preheat the oven to 350F

    Lightly sautee onions.
    Thaw and drain the spinach thoroughly, squeeze out all the water.
    Mix spinach, cheeses, spices and egg with the onions.

    Spray an 8x8" pan with non-stick spray.
    Spray 1 sheet of phyllo cover with 1 more sheet and line the pan with the two sheets allowing extra to hang around the edges.
    Very gently press the pastry into the corners of the pan and fill with spinach mixture.
    Spray the last sheet of phyllo, fold in half and place on top. Fold all excess pastry in towards the center.
    Spray the top lightly.
    Bake 30-35 minutes.

    Serves 4
    4 points per serving (3.6 with egg substitute, 4.3 with whole eggs)

    Yum - This sounds so good.

    I can make it Core ex. for the Phyllo. I'll have to check on those points. Someone suggests using Egg Roll wraps, but not happy with the point value on those. I'm so glad I found this site. I'm getting some great recipes.

    My whole family adores spanakopita. Phyllo points: Phyllo dough,frozen1 oz. (about 1 1/2 sheets)2

    I use olive oil for the top to get a good crust - gives me my 2 tsp good oil for the day. Here is the recipe for my filling - love the herbs:


    4 pkgs. frozen chopped spinach, thawed
    4 onions, chopped
    2 bunches scallions, including 4 inches of green tops, finely chopped

    2T minced garlic
    1/2 cup chopped fresh dill or 3 T dried

    1/2 cup chopped fresh mint or 3 T dried
    1/2 cup chopped parsley or 3 T dired
    1 lb. feta cheese, crumbled
    1 lb. phyllo pastry
    olive oil


    There is fat free feta that's not bad. Sometimes I use half and half to get more flavor. Sorry I can't find the notes I took on points for FF feta.
