This is my favourite way to eat eggplant (the only way DB likes it) and it is the perfect ultra low point dinner!

1 small onion chopped
1 (approx. 1lb) eggplant chopped in 1" cubes
1 (approx. 8") zucchini chopped in 1/2" cubes
1 green pepper cut in chunks
1 sweet red pepper cut in chunks
1 can chopped tomatoes w juice
1/2 t. each rosemary, oregano, thyme
pinch cayenne
1/4 c diced fresh basil
salt + pepper to taste

Spray a large saucepan with non-stick spray and sautee onion on medium until soft
Add eggplant and cook 5 min. stirring frequently
Add zuchini and peppers and cook another 5 min.
Add tomato and spices (except fresh basil) and simmer 30-40 min stirring occasionally until vegetables are cooked
Stir in basil and serve with fresh pepper.
