    I make these alot-very filling and very good.

    Enchiladas

    Recipe By :
    Serving Size : 10 Preparation Time :0:00

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    10 fat free flour tortillas
    2 cups tomato juice
    1 packet taco seasoning mix
    1 can fat-free refried beans
    2 cups cheddar cheese, lowfat -- shredded

    Preheat oven to 350.

    Wrap tortillas in aluminum foil and set in oven for 10 minutes.

    Mix taco seasoning mix with 2 cups tomato juice. Set aside.

    Heat beans on stove with 1/2 cup tomato juice mixture until heated through.

    Place 1/4 cup bean mixture and 2 tablespoons cheese on center of tortilla. Jelly roll and place in greased casserole dish. Repeat.

    Pour remaining tomato juice mixture over top of enchiladas. Cover and bake 35 minutes.

    Remove from oven, uncover and sprinkle remaining cheese on top. Cook for additional 5 minutes or until cheese is melted.

    I have couple of ?'s What is the serving it says 10 then the nutrtional info comes out to 2 pts but your note says 4 pts. I'm confused.
    How many for a serving?

    So sorry. This recipe wasn't from my Mastercook originally-I got it off another site and put it in. The original recipe said 4 points a piece, but it didn't specify if it used fat-free flour tortillas or not, and that's what I put in. The nutritional info on my Mastercook is not always accurate, and it didn't recognize the info on the refried beans, so I would stick with 4 points each, just to play it safe.
