Thread: stuffed zucchini

    Get a giant zucchini and cut it in half, length-wise.
    Scoop out all the guts and discard (or save for another recipe), scooping the sides until there's about a 1/4 inch of flesh left.

    Filling:
    fresh tomatoes, chopped, approx 4 small
    seasoned bread crumbs
    fresh basil, chopped
    feta cheese, approx 3 ounces
    minced garlic, approx 1/2 tsp

    Toss ingredients, spoon into zucchini boats, bake at 400 degrees for 15-20 mins.

    As you can tell, I am not one for accurate measurements, just make it look like it tastes good. I made this without the garlic and the basil and it was equally as good.

    Points value is low
    feta cheese is 3 points per 1.33 ounces
    bread crumbs are low, but vary based on brand
    So, it's somewhere between 3 and 6 points per boat depending on how much cheese you use.
    Serve hot! Gets mushy as it cools.

    YUM! A confirmed zucchini lover here....this sounds delicious! I will try it Friday after Thursday nite's trip to the farmer's market for a BIG ONE! Thanx for sharing!

    [img]tongue.gif[/img] Thanks for sharing this I was looking for a great low point stuff zucchini reciepe to share with people at work in 2 weeks. There are four of us that work together on Sundays and we decided to have a different food exchange once a month and bring in the dish. Well Sept. is our zucchini feast and I was going to make my stuffed zucchine the traditional way that I make using ground turkey and rice and cheese but this is so much better [img]tongue.gif[/img] I can't wait to try it. I think I'll chop up the rest of the zucchini and dices some green peppers us and add this to the dish. Thanks again for sharing.
