Hi all,

Wouldn't you know I can't find the orginal post for this recipe. I may have gotten this from another site.

I just wanted to report in that I made this recipe for my daughter and her roommate who are vegetarians. I had a sandwich too. It was a big hit to all of us!!! They were very impressed that I actually made hummus for them. So, thank you to whomever originally posted it.

Just a comment, I fixed it in the blender. It didn't seem to want to blend. Maybe I didn't have enough liquid in it. Anyway, next time I will try the food processor and see if that works better. And next time, I will make a double batch.

Next, I am going to try the black hummus recipe.

Another "Hummus" Recipe
Serving 1/4 cup = 2 pts

1 can Chickpeas, drained
Lemon Juice, 1 Tbs (I use Real Lemon)
Cumin, 1/2 tsp
AllSpice 1/2 tsp
Curry 1/4 tsp (optional)
Minced Garlic (I use minced in a jar)
1 tsp Louisiana Hot Sauce (Optional)
Creamy Peanut Butter 1/4 cup (or can use Tahini. I like the Peanut Butter in my mine.)
1-2 Tbls Water (Optional, just for Processing,)
Process or Blend all together in a Food Processor or Blender until Smooth. Refrigerate.

Just a quick question, how long does hummus keep for in the fridge? I've made it before but was always a little uncertain as to how long I could safely leave it in the fridge before pitching?

I don't have the foggiest notion..... I've never made or bought it before.

I'll ask my daughter's roommate, she will probably know.

Hi there,

I checked with my daughter's roomie and she said the stuff she buys at Trader Jo's has a 10 day date on it. I don't know if that would have any preservatives it in though.

I bet you could freeze it!!

Or maybe check with Cybergranny's Mess Hall.

I think homemade hummus has about a week of fridge life...not much more...but I usually finish it by then! I also add scallions which makes it really yummy!!!
