    Well this recipe comes from www.localdiner.com
    I have made it 2 times and after my husband requested it for his birthday dinner yesterday, I figured it was about time I posted it here. I don't use the entire cup of lentils though, more like 3/4cup becasue I dont have a big enough pan!
    Hope you enjoy! This is VERY filling!!

    LENTIL TACOS

    1 Cup Onion, chopped
    1 Clove Garlic, minced
    1 Teaspoon Olive Oil
    1 Cup Dry Lentils, rinsed
    1 Teaspoons Chili Powder
    2 Teaspoon Ground Cumin
    1 Teaspoon Ground Oregano
    2 1/2 Cups Chicken broth
    1 Cup Salsa
    12 Taco Shells
    1 1/2 Cups Lettuce, shredded
    1 Cup Tomatoes, chopped
    1 1/2 Cups Reduced Fat Cheddar
    Cheese, shredded
    6 Tablespoons Fat Free Sour Cream

    In a large skillet sauté the onions and garlic in the oil. Add the next 5 ingredients and simmer for 30 minutes covered. Uncover and cook until the liquid reduces. About 6 minutes. Mash the lentil mixture slightly. Add the salsa and stir in. Spoon 1/4 cup intoeach shell. Top with the remaining ingredients. Serve.

    This sounds great, thank you....

    A question though. Believe it or not, I have never bought dried lentils. Can you tell me if I just buy a small bag of dried beans (variety?), in the supermarket.

    I would like to try this, but I am totally in the dark about those lentils. Help please... [img]graemlins/help.gif[/img]

    Dawna- I buy a 16 ounce bag of lentils. That is the smallest I've seen. I find them right next to the rice in the grocery store. Dry beans are SO CHEAP!!! The lentils I used in the recipe were brown. I know lentils come in different colors. But I don't think it would really matter in this recipe. I don't know if one color cooks faster then another

    We really like this recipe. Its neat when you go to mash them, it almost starts to look like ground beef.

    If you use the whole cup of lentils you made need to add a little water. That is another reason, why I used a little less then the 1 cup of lentils. They really soak up the liquid.

    Also the first time I ate these. I was almost uncomfortably STUFFED!!

    Thank you for posting this recipe. It is definitely a keeper. I used green lentils and it turned out great.

    This sounds so good! I'm definately trying this one next week. It sounds like a very good burrito filling as well.

    I just wanted to report that I made this recipe and it was fabulous!!! My husband declared that this one is staying in the rotation.
