Thread: I need your Sweet Potatoe Ideas...

    Hey all!

    Im not sure if this is the right place to be posting this but im looking for sweet potatoe cooking ideas...

    Ive tried putting them in the oven for 30mins but they stayed had and burnt on the edges...

    So? Any ideas?

    I have been cutting my in two pieces, usually cooking two potatoes at the same time, I put the four pieces in a covered dish with about 1 Tablespoon of water and microwave them for about 10 minutes. About half way through the cooking time I take them out and roll them over. They are really most and soft...mmmm...I had one tonight

    Stuffed Sweet Potatoes
    Makes 6 servings

    6 sm. sweet potatoes (2 1/2 pounds) - I used 3 large
    1 (15-oz) can pear halves, in juice
    1/4 cup firmly packed brown sugar
    1/4 tsp. salt
    1/4 cup sweetened dried cranberries or raisins
    1/3 cup chopped pecans, toasted & divided

    Wrap potatoes in foil and bake until done; about 50 minutes. Let cool slightly.
    Cut potatoes in half if using large, and carefully scoop out pulp, leaving 1/4 inch
    thick shell. Set aside. Drain pear halves, reserving 1/4 cup juice. Place pear
    halves and reserved pear juice in food processor; process until smooth. Add
    potato pulp, brown sugar, & salt, process until blended. Stir in sweetened
    dried cranberries and 4 tbs. Pecans. Stuff potato shells evenly with potato
    pulp mixture. Sprinkle with remaining pecans. Bake at 375 degrees for
    10 minutes or until heated thoroughly.

    POINTS: 6

    PER SERVING: 324 Calories, 5 g Fat, 6.9 g Fiber

    Maple Stuffed Sweet Potatoes
    Makes 8 Servings

    Eight 4-ounce sweet potatoes
    6 tablespoons plain nonfat yogurt
    2 tablespoons reduced-calorie pancake syrup (60 calories per fluid ounce)
    2 tablespoons orange juice
    1 tablespoon Dijon mustard
    1/4 teaspoon cinnamon
    1/8 teaspoon nutmeg

    Preheat oven to 375 F. Bake potatoes 50-60 minutes, or until easily pierced
    with a fork. Remove from oven and cool slightly. Slice potatoes in half lengthwise.
    Scoop out pulp, leaving a 1/2"-thick shell. Place shells in 13 x 9" baking pan and
    transfer pulp to a food processor or blender. Add remaining ingredients to food
    processor; process until smooth. Spoon mixture evenly into shells. Return to oven
    and bake 5-10 minutes longer, until heated.

    POINTS: 3

    PER SERVING: 136 Calories, 2 g Protein, 0 g Fat, 31 g Carbohydrate,
    88 mg Sodium, 0 mg Cholesterol


    Glazed Sweet Potatoes
    Makes 5 Servings

    Cooking spray
    1 pound sweet potatoes, peeled
    1 tablespoon cornstarch
    3/4 cup orange juice
    1 tablespoon brown sugar
    2 tablespoons lemon juice

    Preheat oven to 425 degrees. Cut sweet potatoes into 1/2-inch-thick slices;
    place in a 1-quart casserole coated with cooking spray. Combine cornstarch
    and next 3 ingredients in a bowl; stir well. Pour over potatoes. Cover; bake
    at 425 degrees for 45 minutes or until potatoes are tender.

    SERVING SIZE: 1/2 cup

    POINTS: 2

    PER SERVING: 110 Calories, 1.5 g Protein, 0.4 g Fat, 0.1 Saturated Fat,

    When I bake sweet potatoes in the oven, I wrap them in aluminum foil, place them on the middle rack in the oven and bake for 1 to 1 1/2 hours at 375 degrees. When they feel kind of soft when you gently sqeeze them., they are done.

    Sweet Potato Coins

    Cut sweet potatoes in 1/8 inch slices. Lightly oil or spray a cookie sheet, lay the sweet potato slices down then brush with oil or spray. Broil for about 10 minutes - watch carefully!!

    I love mine roasted! I peel them and cut into chunks. Put in a glass dish sprayed with Pam. Sprinkle garlic powder, salt, pepper and a bit of rosemary and thyme, bake in a 350 degree oven for about 30-minutes or until done!

    HI, THE FIRST WELCOME BOOK FROM WW WITH THE POINTS
    IN IT HAD A GREAT EASY RECIEPE FOR GINGER SWEET
    POTATOES IN IT. I MADE THEM FRIDAY NITE THEY WERE
    GREAT, I HAVE BEEN COOKING WITH SWEET POTOTOES MORE SINCE THE SERVING SIZE IS SO LARGE. IF YOU

    I received a postcard from WW about a month ago, wanting me to come back. On the postcard was the following recipe. I have yet to make it, but my parent's have and they LOVE it!

    WW Crispy Sweet Potato Fries
    Make 4 Servings @ 4 Points Per Serving

    2 lbs large sweet potatoes, scrubbed
    1 tbsp olive oil
    tsp salt
    tsp ground pepper

    Preheat oven to 450.
    Halve the potatoes, then cut into inch wedges.
    Toss with oil, salt and pepper in a medium bowl.
    Arrange potatoes in a single layer on a non-stick baking sheet.
    Bake, turning once, until golden brown and crisp, about 35 minutes.

    Per Serving (about 1 cup):
    234 calories, 4 g fat, 0 g saturated fat, 0 g trans fat, 0 mg cholesterol, 153 mg sodium, 48 g carbs, 6 g fiber, 3 g protein, 57 mg calcium.
