I never thought I'd be posting a recipe, but this was good. The salad I was planning on for last night got ooky so I was forced to punt for a veggie (my DH hates anything green except salad and green beans, but he did eat this, i was shocked!)

10 oz pack froz spinach
mushrooms (I used fresh)
1/2 bag of mixed veggies (I just wanted to finish off the bag, you could use whatever you like)
1.5 oz ff cream cheese (half a container)
1/2 cup skim milk
1/3 cup ff parmesean
1/2 cup bread crumbs
1 tsp olive oil

cook and drain the spinach, saute the mushrooms in the olive oil (I added some pam too). Add the frozen veggies and the drained spinach. Cook until everything is heated through. Add milk and cook until bubbly, then add cream cheese and cook until melted.
Throw the whole thing in a casserole dish and top with mix of bread crumbs and parmesean. bake at 350 until topping is browned and sauce is bubbly.
I counted this as 6 servings at 1 point each. (I hope that's acturate, my math is almost as bad as my cooking!) [img]graemlins/clown.gif[/img]
