Adding strawberries to a classic spinach salad adds beautiful color, refreshingly sweet flavor--and plenty of vitamin C. With some crusty bread, it's a light meal; but if you like, omit the goat cheese to make a substantial

1 tablespoon cider vinegar
2 teaspoons corn oil
1 teaspoon Dijon mustard
1/2 teaspoon honey
Pinch crumbled dried rosemary
Freshly ground black pepper, to taste
One 10-ounce package fresh spinach, cleaned and torn into bite-size pieces
2 cups strawberries, halved
1/4 sweet onion, very thinly sliced
2/3 cup crumbled aged goat cheese

In a small bowl, whisk the vinegar, oil, mustard, honey, rosemary and pepper. In a large salad bowl, combine the spinach, strawberries and onion; drizzle with the dressing and toss to coat. Sprinkle with the cheese and serve at once.
