The Golden Door Spa
Makes 6 servings.

3/4 cup dry Kashi® Pilaf (about 1 packet from 19.5 oz.box)
1/3 cup dried red lentils
1 t fennel seeds
1 pinch chili pepper flakes
2- 1/2 cups vegetable broth or water
2 t dark barley miso
1 T olive or canola oil
1 medium onion, minced
1 medium carrot, finely chopped
2 medium stalks celery, finely chopped
1/4 cup fresh parsley, chopped
1/2 cup Italian bread crumbs
1/2 t soy sauce or Braggs liquid amino acids
Non-stick cooking spray
1/8 t salt (optional)
1-1/2 T Dijon mustard
2 medium tomatoes, cut into 12 thin slices
Directions:
In a small saucepan, combine Kashi® Pilaf, lentils, fennel seeds, chili flakes and broth or water. Cover and simmer for approximately 55 minutes or until overcooked and the mixture has a mushy texture. Stir in miso and set aside. Preheat oven to 250° F.

In a medium size sauté pan, heat olive oil over medium high heat. Add minced onion and sauté until softened. Add celery and carrots and saute briefly. Add the Kashi/lentil mixture to pan and continue sauteing and stirring, until it resembles a stuffing mixture. Remove from heat. Add bread crumbs and soy sauce.

Spray two pieces of wax paper with non-stick vegetable spray. Scoop twelve 2-oz. burgers onto oiled side of paper. Place second piece of paper on top of burgers. Flatten burgers by pressing on the outside of the paper. Place in freezer until solid. Remove from freezer for sauteing. Heat griddle over medium high heat. Spray with vegetable spray or use canola oil. Saute burgers on both sides until lightly browned. (Inside of burger will not be hot). Transfer to shallow baking pan. Spread thin amount of mustard on top of each burger. Top with thin slice of tomato. Place in preheated oven to keep warm.

Again heat griddle over medium-high heat. Spray with vegetable spray. Toss sliced onions onto grill. Sprinkle on salt. Keep turning onions with a large spatula and cook until onions are brown and soft, taking care not to burn them. Remove veggie burgers from oven and serve on whole wheat buns with hot grilled onions.
