Makes about 10 single servings.
1 teaspoon canola oil
2 cloves garlic, minced (or more if desired)
1 medium red onion, sliced
1 red bell pepper, diced
1 cup cups broccoli florets
1 cup corn kernels
1 can black beans, rinsed and drained
2 teaspoon cumin
1/4 teaspoon cayenne pepper (more or less to taste)
1/2 teaspoon salt (more or less to taste)
3 cups Kashi Pilaf, cooked
1/4 cup fresh cilantro, finely chopped
Directions:
Pre-cook Kashi Pilaf according to package.

In a large pan, sauté the garlic, onion, red bell pepper, and broccoli florets on medium-high heat in the canola oil for about 3 minutes stirring frequently. Stir in the corn, black beans, spices, salt and mix well. Add water if necessary to prevent sticking and simmer on low heat with a lid for about 3-5 minutes. Serve over a bed of cooked hot Kashi Pilaf and sprinkle the fresh cilantro over the top.
