Makes 8 servings.

2 cups Kashi Pilaf, cooked and hot
1/2 teaspoon extra virgin olive oil
2 cloves garlic, minced
1/2 red onion, diced
1 red bell pepper, sliced into thin strips lengthwise
1 small zucchini, thinly sliced
1 cup frozen yellow corn, thawed
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 cup fresh cilantro, finely chopped
4 eight inch, fat free, whole wheat tortillas
1 cup canned black beans, drained and rinsed
1/2 cup fresh salsa
Directions:
Cook Kashi Pilaf according to directions on package. Heat olive oil in large skillet at medium high heat. Add garlic, onions, bell pepper, zucchini, corn, cumin, cayenne pepper, and salt and stir mixture frequently until onions are translucent. Stir in cilantro, cover the mixture with a lid and remove from heat. Heat up the black beans in a microwave or a small saucepan.

Fill each tortilla with a half-cup of the cooked pilaf, a quarter cup of black beans, and divide equal amounts of the sautéed vegetable mixture into the tortilla. Wrap each tortilla so the ingredients remain inside, then cut in half. Top each serving with a tablepoon of your favorite salsa and serve immediately.
